I have over 101 different types of tomatoe plants and i need some ideas for when canning comes along lol...i say i planted way to many Thank for ur help =)

Homemade Spaghetti Sauce


Tomato Sauce

Drop tomatoes in boiling water for 1 minute then into ice water. Peel tomatoes and cut up fine. Cook tomatoes in large saucepan with 1 tablespoon salt, stirring often until reduced by half. Strain mixture to remove seeds and return to saucepan or crockpot to cook on low heat until thick and smooth.

Tomato Paste

Use above procedure but continue cooking on low heat stirring frequently so sauce does not scorch, until it reaches paste consistency. Then freeze in well sealed containers for up to 1 year.

In a large sauce pot:

Using the above Tomato Sauce, mix 1/2 teaspoon baking soda in a glass of water and stir into tomato sauce. Stir until foam disappears, this reduces the acid in the sauce. (Sugar will do the same thing, but be careful not to use too much or the sauce will be sweet.)

When foam is gone add to taste: salt, pepper, grated cheese, basil, 1 large or 2 small bay leaves, handful of parsley.

Sauté chopped onion and minced garlic in olive oil. Cook but do not brown. Add to sauce.

Bring to a low boil, stirring occasionally.

*Contrary to popular opinion oregano is associated more with pizza sauce than spaghetti sauce.

Let simmer till reduced and sauce thickens, stirring frequently.

* If desired crushed red pepper may be added after sauce cooks a while, do not add with the other spices or sauce will get too hot.

To make a meat sauce add cooked and drained ground beef and if desired ground Italian sausage.

I normally saute chopped onion and garlic and then add the tomatoes and cook. Then I add salt and oregano.
I also found this recipe in the web. It looks pretty simple.

Easy Spaghetti with Tomato Sauce

"This is an easy and delicious recipe for a meaty spaghetti sauce with a homemade taste."
INGREDIENTS:
12 ounces spaghetti
1 pound lean ground beef
1 teaspoon salt
3/4 teaspoon white sugar
1 teaspoon dried oregano
1/4 teaspoon ground black
pepper 1/8 teaspoon garlic powder
2 tablespoons dried minced
onion
2 1/2 cups chopped tomatoes
1 1/3 (6 ounce) cans tomato
paste
1 (4.5 ounce) can sliced
mushrooms

DIRECTIONS:
1. Brown beef over medium heat. Drain off fat.
2. In a large pot, combine beef, salt, sugar, oregano, pepper, garlic powder, onion flakes, diced tomatoes, tomato paste, and mushrooms. Simmer at a low heat setting for 2 hours, stirring occasionally.
3. Cook pasta according to package directions. Drain. Serve sauce over spaghetti.

1/2 c onion slices
2 tbsp olive oil
1 lb ground beef
2 garlic cloves, minced
2 lbs canned tomatoes, 4 cups (can be fresh)
16oz canned tomato sauce, 2 cups
3 oz canned mushrooms, 2/3 cup
1/4 c parsley
1 1/2 tsp oregano
1 tsp salt
1/4 tsp thyme
1 bay leaf
1 cup water

In large skillet, cook onion in hot oil until almost tender.
Add meat and garlic; brown lightly.
Add remaining ingredients.
Simmer uncovered 2 to 2 1/2 hours or till sauce is thick; stir occasionally.
Remove bay leaf.
Serve over hot spaghetti.
Garnish with Parmesan cheese, if desired.
NOTE: One pound of spaghetti will serve 4 to 6 as a main dish with sauce.

You need a blender. Wash, core and squeeze out the seeds to your fresh, ripe tomatoes. Cut the tomatoes and place in the blender. Puree for a few second and pour into a large pot. Do this in batches till all your tomatoes are blended. Add a few cloves of garlic, salt to taste and a large diced onion. Cook stirring occasionally till the mixture is thickened. At least 1½ hours Add a few fresh basil leaves and simmer about 15 more. min. At this point you can can this mixture in Quart jars or freeze in containers. When you want to make Spaghetti sauce. Mix one quart of tomatoess with 1 can of tomatoe paste add more garlic and meatballs.Add fresh basil and Romano cheese. the last 15 min of simmering. Hope you enjoy this.

Get several peeled tomatoes. To do this easily put them in boiling water, take out with slotted spoon after a few second and remove skin quickly under cold water . Chop the tomatoes in medium pieces. Put in pan, add one small chopped onion, some slices of mushrooms, a little thyme , salt and white pepper powder. Add a tablespoon of tomatoe paste- this will thicken it. You can also add herbs. This is one homemade way. This sauce will stay in the fridge too .You can add tomatoe paste later and meatballs etc whatever is desired when time to prepare food.

Normally I just make Tuna and Mushroom sauce. Saute some garlic and onions in a pan. Add Mushroom slices and one can of Tuna Flakes. Stir well for a few minutes. Then pour in the tomatoes (diced or well blended). Add salt to the tomatoes so the juices come out. Then continue stirring until done. More tomatoes, more sauce.

DON'T COOK IT ALL DAY. You don't even have to cook this if you don't want to. Simple recipe = chop tomatoes, add smashed garlic, MAYBE a little onion, salt, hot red pepper flakes, LOTS of fresh basil. Sprinkle in feta cheese or, if you have it, fresh mozzarella (not that rubbery square stuff Americans call mozzarella, invest in fresh mozzarell, buffalo if you can find it.) This "sauce" is great on grilled bread (not WONDER bread) which has had a clove of garlic rubbed over it while still hot from the grill. SIMPLE ingredients prepared SIMPLY - always the best option.

I really don't know what to tell you about what to do with your tomatoes, but I have tried making homemade spaghetti sauce before, and in the end it tasted the same as what I used to buy in the store. Just start offering your friends, neighbors, whomever some tomatoes if you have more than you want to deal with. Good luck.

Put about 1 pound of hamburger meat and fry it , and when its done drain it really good, get a couple jars of prego sauce , what ever kind you would prefer, and a package of spagetti seasoning, and can of tomato paste, add seasoning to the meat and the sauce and paste, then couple cans of mushrooms ( depends on how many you would prefer ) and add 1 cup of water, and stir it up and then put some garlic powder in it just enough to taste it, and some ittalian seasoning as well. If you like peppers , I usually dice them up and put them in it and couple tomatoes diced up and throw in it.. And its really good like that ..
