I would add some chopped green onions. The color and the light onion-y flavor will be great!
Bacon would be good too (instead of the ham...) Bacon's ALWAYS a good idea!!

Try switching the cheese that you use on top. How about a pepper jack, dill Havarti, smoked Provolone, parmesan or mozerella. Just don't use a strong flavored cheese in the sauce too. I've made that mistake. It's just too much- stick with cheddar for the sauce.

Use EXTRA Sharp Cheddar AND Montery Jack Cheese. Chop up a Ham Steak add to .... don't forget the onion and parsley!!

Scalloped Potatoes Parma
4 each potatoes, peeled and sliced
1/2 cup grated Parmesan cheese
1/4 teaspoon salt
1/2 teaspoon black pepper
1 cup evaporated milk
Spray a large casserole with cooking spray. Arrange a single layer of potatoes in the bottom. Season lightly with parmesan, salt, and pepper. Continue to layer and season potatoes. Pour evaporated milk over all. Bake, covered, at 375 degrees for 30 minutes. Bake, uncovered, at 375 degrees for 20-30 minutes, until tender and golden. Serve hot.
Scalloped Potatoes with Jalapeno Chiles
1/4 cup butter, divided
3/4 cup onion, finely chopped, divided
12 potatoes, peeled, thinly sliced
Salt and pepper to taste
Ground nutmeg to taste
3 cups skim milk, divided
4 cups Parmesan cheese, freshly grated
1-1/2 cups heavy cream
1/4 cup jalapeño chile, finely chopped
Per portion:
Heat 1 teaspoon butter in 6-inch skillet. Add 1 tablespoon onion; saute. Add 1 sliced potato with salt, pepper and nutmeg; stir gently. Smooth layer of potatoes; add 1/4 cup milk. Simmer 1 minute. Sprinkle with 1 ounce Parmesan cheese. Pour 2 tablespoons cream over top and sprinkle with 1 teaspoon jalapeño. Bake at 350 degrees F until golden brown, about 15 minutes.

cayenne pepper would give it a little zing. actually, cumin or coriandor would make it smoky without any heat.
