The answer is in your question. You're overcooking them. Try cooking for less time OR it might be the brand you are using. Cheap instant noodles such as Mr. Noodle always come out droopy. Try an imported brand from Korea or Japan. If it has Asian characters on it, that's a good sign.

You cook them like any other pasta noodles.
Boil water in a large pot. Add noodles and stir occasionally to keep them from sticking together. After about 8 minutes, do a taste test. If the noodles are still hard, cook for a little longer and test again. Keep doing this until the noodles are at the right consistency.
For instant noodles, follow the directions on the package. I'm sure it's in English.

HOMEMADE EGG NOODLES
EGG NOODLES:
3 cups flour
1/2 tsp salt
4 eggs, at room temperature
1/3 cup water
Put flour, salt and eggs in a large bowl. Using your hand, mix together, adding 1 tbsp water at a time and mixing until dough forms a ball.
Place dough on a well-floured board and knead until smooth and elastic, about 8-10 minutes. Cover and let sit for 15 minutes.
Cut dough into 4 equal parts; keep covered. Roll 1 part of dough at a time until desired thickness is reached (about 1/16th of an inch). Roll dough around rolling pin and slip rolling pin out. Cut in 1/2 to 1/8-inch strips and shake out on a towel to dry, for about 2 hours. While noodles are drying, make soup.

Read the directions on the package they came in. Usually its about 10 minutes until they are done. Now if you have ramen and you overcook that...wow...major cooking problems. I suggest you try going to an Asian market and find already cooked udon noodles(those big fat ones, they are soo good) either frozen or refrigerated, stick'em in some broth, add chicken or something and spinach or cabbage, tofu, sliced shiitake mushrooms and carrot and you've got tasty noodle soup! Or you can stir-fry...your choice, don't forget the soy sauce! ^-^

Comon girl! It's freaking instant noodles. All you need is to add hot water and let it sit for about 2 to 3 minute. It's not hard.

they need to be steamed very lightly
or when you are done thrown them in a frying pan with sauce
to remove the excess moisture and firm them up
but lots of rice noodles are very sesitive mushy and light
treat them gently or they will go to mush
