CHICKEN ALFREDO

Prep: 15 min - Cook: 60 min Serves 8
You can vary the taste of this dish by the way you cook and add the chicken. The chicken breasts can be grilled and served on top of, or beside the Fettucine Alfredo, or cut in morsels, sautéed or grilled until just done, then mixed with the fettucine and sauce at the end. My favorite is chicken grilled on charcoal. Another variation is adding a sprinkling of Parmesan cheese and finishing in the oven (2nd picture).You can also (optionally) add steamed broccoli florets and/or sautéed, diced red pepper. You can use fettucine, taglietelle, mostaccioli, penne or farfalle pasta.
2 skinless chicken breasts, cut in slices about 1/4 " thick then in bite-size morsels
6 or so leaves of sage
1 cup broccoli florets, steamed (optional)
1 red pepper, seeded, coarsley diced, sautéed in olive oil or butter (optional)
8 oz pasta (fettucine, tagliatelle) or 12 oz (3/4 package) penne, etc. (Fettucine is heavier).
4 tablespoons unsalted butter, at room temperature (or 2 of olive oil for sauteeing the chicken and 2 of butter for the sauce)
1 cup freshly grated Parmigiano Reggiano (Parmesan), at room temperature, plus extra cheese to pass at the table
1 1/4 cup heavy cream or Half and Half (or 1/2 of each)
salt and freshly ground pepper (use white pepper if you have it)
a pinch of grated nutmeg


Set the pasta water to boil. In a pan large enough to hold all the ingredients, sauté the chicken in 2 tablespoons of butter or good olive oil until lightly browned. Set aside in a warm place. Cook the pasta. Remember to reserve some of the cooking water to moisten your chicken Alfredo if it is too dry. Add the heavy cream, 2 tablespoons of butter and 1/2 cup Parmesan cheese to the same pan. Keep cooking on low-medium heat, stirring occasionally until the mixture reduces slightly and thickens.
Add pinch of nutmeg, 3 - 4 leaves of sage, salt and pepper to taste. Stir.
Add the cooked chicken and optional ingredients and mix again. Taste for salt. Add a Tablspoon or two of the pasta cooking water if too dry. Add the cooked and well-drained pasta to the sauce. Mix well with a wooden spoon.
Turn into a warmed serving bowl, or directly onto warmed plates.

VARIATION: Turn pasta mixture into a baking dish, sprinkle 1/2 cup Parmesan cheese on top, and set under broiler for about 30 seconds, until flecked with brown

MAGDALINAS VALENTINE CHICKEN

4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount

flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.

Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.

Drain and remove excess grease from skillet.

Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.

Simmer on medium heat till onions are soft.

For a quick and easy receipt that works for me, Buy a box of Chicken Shake'n Bake and follow the direction on the box. I was always hesitant to use the stuff until about 2 years ago and use it regularly now. To prevent having to clean up a baking pan I place Reynold's Foil on the pan. Wrap it up after cooking and throw away. Taking the chicken off before throwing it away though. lol

4 chicken breasts
Garlic Salt (see more options below)

1. Preheat oven 400 degrees
2. Wash and dried chicken.
3. Rub with Lawry's Seasoned Salt
4. Bake in oven for 30 minutes for breasts, 35 to 40 minutes for thighs.
5. Serve warm.

I love this recipe because it is easy to make, especially for a busy work week.

For baking, I can substitute Seasoned Salt with:
* Lemon Pepper
* Garlic Salt
* Roasted Garlic
* Crushed herbs and butter
* Spices
* Herbs
* Salt and Pepper
* Fresh lemon or lime slices
* Crushed fresh fruits and marinade over night (Kiwi, Mango, and Papaya are the best choices for chicken and pork. Pears and apples are the best choices for beef and pork. Orange slices are good with fish fillets)

For steaming and boiling, I like to use:
* Chinese spices
* Soy Sauce
* Rub with salt and steam on top of uncooked rice
* Serve with Ginger and Onion Sauce.

Chicken Breasts w/ Mozzarella Cheese

INGREDIENTS:
4 boneless chicken breast halves
1/4 cup flour for dredging
3 tablespoons butter, divided
salt and pepper, to taste
4 ounces sliced mushrooms
4 slices mozzarella cheese
PREPARATION:
Pound chicken breast halves until evenly thin. Dredge chicken with flour. In a large skillet, heat butter over medium heat. Cook chicken in butter for about 4 to 6 minutes on each side, until tender and cooked through.
Remove chicken to a shallow baking dish; sprinkle lightly with salt and pepper.
Add 1 tablespoon butter to skillet and sauté mushrooms until tender. Arrange mushroom slices on top of each piece of chicken; cover with a slice of cheese. Place remaining mushrooms around chicken. Place chicken breasts under a hot broiler until cheese is melted. Serve immediately with hot buttered pasta or rice.
Chicken with mozzarella cheese serves 4.

Cut into 1 inch cubes, pour Italian dressing over them. Thread on skewers alternately with peppers , onions, mushrooms and cherry tomatoes, then grill. YUMMMMY!

I brown them in some seasoning and olive oil, then boil pasta, heat alfredo sauce and combine. In fact, I had that for dinner Tues night. It was yummie.

Marinate in soy sauce and sesame seed oil. Then fry in sesame seed oil. Serve with Asian noodles or rice. yum!
