The cheese-making process removes most of the lactose from the milk, so cheese contains very little lactose. Usually that small amount isn't enough to make lactose intolerant people sick. I am lactose intolerant and cheese has only made me sick once, when I ate a lot of pizza that had tons of cheese on it. Cheese can be a good source of calcium for most lactose intolerant people.

The higher the fat content, the lower in the lactose content in cheese and butter. For example, butter actually has almost no lactose at all.
Also, the harder the cheese, the lower the lactose, the softer the cheese, the more lactose.

You can try using Lactaid or a similar product to help digest the lactose in cheese. If you'd prefer to avoid lactose altogether there are soy "cheese" slices you can purchase at a health/natural foods store (I've seen them at Whole Foods if you live near one) that are supposed to look, feel, and taste like cheese.

If you take the lactose enzyme (in pill or powder form) right before you will be fine. You can get it at the health food store or WalMart, even. Any store carries it now.
