"People" in general are omnivorous -- they eat both meat and plant foods. This explains why our teeth are shaped the way they are. Horses and cows, on the other hand, have much flatter teeth because they need to mash grain and vegetation instead of tearing flesh.
Some people, however, have chosen to a vegetarian or vegan lifestyle. These choices can be based on religious beliefs, health concerns, or any arbitrary decision -- it's a personal choice.
Cholesterol is only found in animal-based foods. So, many people with high cholesterol avoid or give up meat to stay healthy.
Budhists and Hindus amongst others are vegetarian because of religious or philosophical beliefs.
Many animal rights activists are vegetarian or vegan because they don't believe in killing an animal to provide a food source.
Some environmentalists feel that livestock requires far too many resources for the amount of nutrition they provide. Therefore, they advocate alternate sources of protein (like Soy) to curb the number of livestock that are bred.
For some, the cost of meat is simply too great, or they may not enjoy the flavor.
Also worth noting is that "vegetarians" come in many varieties. Some consume animal-based products like eggs, milk, cheese, etc.. and are often called "ovo-lacto" vegetarians. Vegetarians that avoid all animal based products are known as "vegan"

What have you got against vegetarians you plank? The "canine" teeth are for biting anything, meat, veggie, fruit or whatever. By the way I'm not a vegetarian but I think people have the right to choose to eat an animal or not so get off your soap box. According to research recently, eating too much red meat apparently contributes to bowel cancer anyway and lots of people choose not to eat meat because it's very healthy if you substitute it with other foods in your diet. Grow up!

Some people are allergic to antibiotics, and if they eat meat (which animals for consumtion are fed antibiotics), they can die if they even eat one little piece. So maybe we are born with K9 teeth but this is a modern day term, and those teeth are also good for grains and other vegetables.

Like Sarah C we have choice, there are plenty of veggy options on the market these days and plenty of reasons why individuals become vegetarians. For me personally it is because the texture of meat makes me feel sick and since I became old enough to choose for myself I have eaten meat alternatives, however I am unsure about whether there is a cultural dimension to this issue.

We have canine teeth because our ancestors used to have to rip raw meat off the bone. It's just an inherited trait. Plus you can't expect vegetarians to all of a sudden lose their canine teeth, it would take thousands of years for the teeth to develop into a different shape used for vegis.

Because we are Omnivores!
For people who choose to be vegetarian, it's simple a matter of preference. Many people don't eat meat because they believe it isn't pure- many meat products go through a barrage of intense handling, chemicals, and a large addition of extra, unnatural ingredients.
Don't get me wrong, I love steak, and when cooked correctly, non-vegetarian food can have very good health affects on the body.
I mean, who doesn't like chicken?

Animals deal with pure instinctual stimulus. That is, they will eat what their nose tells them to eat, thinking or taste does not come into it.
Humans however, have the capacity to think, and with thinking, morality comes into play. Some people simply feel it is unmoral or disgusting to eat meat, others do not.
If your question however, is why we've developed canines, this is due to natural selection. Assuming that our ancestors ate uncooked or badly cooked food, those that had sharper teeth generally ate more meat, leading to a more sated self, which led to more reproduction.

Because it's a lifestyle choice. We understand enough about nutrition to maintain a healthy diet without the need for meat if we so choose to.
