To wrap a tortilla:
put stuff you want inside down the middle in a strait line, for about 3/4 the length. fold up the bottom potion then wrap the sides around. that way it keeps all the good stuff from falling out when you pick it up to eat it.
a good side for enchillidas is mexican/spanish rice. and beans.

there are many ways to wrap a tortilla. Best advice i can give you is to let the tortillas sit to room temp. If you're in a hurry, you can nuke them for about 15 sec.
So to wrap them for enchi's, it's not that difficult. You can just roll them and put them into the pan. Or, you can do the nifty burrito wrap where you sort of create an envelope (roll lengthwise, then fold one corner, then the other, then finish it off!)
Side dishes: Mexican Rice, Corn Casserole (similar to cornbread), refried beans with a cheesy topping, fiesta mac and cheese, etc. Get Creative with the foods you know!

Wrap a tortilla: lift one round side around the filling, then wrap up the two sides and roll towards the final side. That probably doesn't make much sense, sorry, it's hard to write out.

To wrap a tortilla you just set the tortilla flat on a surface..put in the stuff for the enchiladas. next take one end of the tortilla and just start rolling it up.
you could use this sidedish:
Green Chile Salsa
condiments, salsa, side dish
0.75 lb tomatillos
0.50 small onion; finely chopped
1.00 serrano chile; finely chopped
1.00 small yellow chile; finely chopped
2.00 teaspoon freshly-squeezed lemon juice
2.00 medium garlic cloves; minced
2.00 tablespoon chopped cilantro
0.50 teaspoon salt
Put tomatillos into a pan with water to cover and bring to a boil. Simmer gently for 10 minutes. Drain, cool, and core. Cut tomatillos into small dice or finely chop in a food processor fitted with the steel blade. Place in bowl. Add remaining ingredients and mix well. Cover and refrigerate. This recipe yields 2 1/2 cups of salsa.

Stuff the tortilla.... tuck the right side first and the left side second then roll that baby to perfection!
Side dishes with Enchiladas.... I like to make corn with red and green bellpeppers. Beans and I steam white rice with frozen broccolli and black beans.
As a desertlike side dish I make sweet corn scoops (like EL Torito)

you roll the tortilla half the way then u wrap the far ends and place it on top of the half-rolled totilla.. then you continue rolling it untill its in the shape of a roll.
rice pilaf is a common side dish with enchiladas.
