Trinidad Stewed Chicken

INGREDIENTS:
1 (4 pound) whole chicken, cut into pieces
3 tablespoons finely chopped green onion
3 tablespoons chopped fresh cilantro
1 teaspoon minced garlic
1 teaspoon chopped onion
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon vegetable oil
1/4 cup brown sugar
1 cup water
1/2 cup canned coconut milk (optional)
1 teaspoon red pepper flakes (optional)
2 tablespoons ketchup
1 tablespoon butter

DIRECTIONS:
Place chicken on a plate. Sprinkle the green onion, cilantro, garlic, onion, salt and pepper over it. Cover, and marinate for 30 minutes.
Heat the vegetable oil in a deep pot over medium heat. Stir in the sugar, and cook until the sugar has melted into a nice golden brown syrup. Add the chicken pieces, and brown quickly while turning continuously. Cover the pot, and let it cook for 2 minutes.
Pour in 1 cup of water, coconut milk and pepper flakes. Replace the lid, and cook over medium heat for 10 minutes. Stir in the ketchup and butter. Continue cooking until chicken is fork tender, 20 to 30 minutes. Taste and season with additional salt and pepper if needed. Serve chicken with the sauce in the pot as a gravy.

Almond Chicken recipe

ingredients
2 tbsp (25 g) 1 oz butter
2 small onions, chopped
4 oz (100 g) mushrooms, sliced
1 tablespoon corn flour (corn starch)
1 1/4 cup (1/2 pint) 300 ml milk
350 g (12 oz) cooked chicken meat, chopped
salt pepper
1/4 teaspoon ground ginger
1/4 teaspoon grated nutmeg
150 g (5 oz) natural yogurt
2 egg yolks
1/8 cup (25 g) 1 oz blanched almonds, split and toasted

method
1. Melt the butter in a saucepan and fry the onions and mushrooms until the onions are softened.

2. Stir in the cornflour and cook for 1 to 2 minutes, then gradually stir in the milk.

3. Bring to the boil, stirring. Add the chicken, salt, pepper, ginger and nutmeg and heat through gently.

4. Mix the yogurt with the egg yolks and add to the pan.

5. Cook very gently until thickened, without boiling.

6. Turn into a warmed serving dish and sprinkle with the almonds.

Try Beer Butt Chicken
Heat a charcoal grill
when ready
season chicken with salt, pepper or any other various seasonings
open a can of beer and place chicken over can with the can in the cavity of the chicken.
place a foil pan in the coals under the grate with the coals around the pan. the pan will collect the drippings
prop chicken on his/her legs for support and slowly cook until done or when chicken is at 165 degrees. this usually takes a few hours but it is soooo good. the beer steams into the chicken and it is so tender.

p.s I hear ginger ale is good too, with a ginger taste in the chicken

I have tow different things you can try.
1) Avgolemono Soup - Chicken, egg and lemon Soup (See the link below)

2) If you have a deep fryer (Turkey fryer) it works great. The chicken will be done in less then 20 minutes. Ans boy the juices will just flow from the bird.

3-Cheese Chicken Cacciatore Manicotti

Nonstick cooking spray
1 box (8 ounces) manicotti
1 teaspoon olive oil
1 cup chopped onion
1 cup plum tomatoes (approximately 2 tomatoes), chopped
1 cup chopped green pepper
2 cloves garlic, minced
3 (4-ounce) boneless, skinless chicken breasts, cooked & diced
1-1/2 cups (6 ounces) shredded Mozzarella cheese
1 cup Ricotta cheese
1 large egg, lightly beaten
3/4 cup freshly grated Parmesan cheese, divided use
1/2 cup fresh basil leaves, chopped
1/2 teaspoon salt
1/8 teaspoon black pepper
1 jar (26 ounces) marinara sauce

Preheat oven to 350 degrees Fahrenheit. Spray a 13x9-inch baking pan with cooking spray; set aside. Cook manicotti 9 minutes according to package directions; rinse with cold water and drain.

Heat oil in a large skillet over medium heat. Add onion, tomato, green pepper and garlic; cook 5 minutes, stirring often, or until vegetables are softened.

In a large bowl, mix vegetables, chicken, Mozzarella, Ricotta, egg, 1/2 cup Parmesan, basil, salt and pepper until mixed. Using a small spoon, fill each manicotti with about 1/2 cup mixture.

Pour 1/2 of the marinara sauce into prepared baking pan. Arrange filled manicotti over sauce and top with remaining sauce. Sprinkle with remaining Parmesan. Bake, uncovered, for 30 minutes or until manicotti is heated through and sauce is
bubbling.

I like soaking chicken in a lemon based olive oil then breading it in an italian herb bread crumb/parmesan cheese mixture. I'll then fry it in olive oil over low heat. It's really good, and alot better for you than the traditional way to fry chicken.

I like to rub the chicken with salt and steam together with the uncooked rice. Serve with Ginger and Green Onion Sauce.

try cooking your chicken with a cup of soy sauce, half cup vinegar, a whole head of crushed garlic, a tablespoon pepper corns, 1 dried laurel leaf, 3 spoonfulls of sugar, 2 cups water and let it boil until chicken is cooked.

option: you can let it cook until a little sauce is already left

Cut chicken into 4 or 8 pieces, wash, drain, season with salt and pepper. Put in oven and grill in pan continuingly basting with seasoned butter. You can have garlic butter with herbs. Melt butter in small pan, add smashed garlic with very finely chopped parsley- then use it to baste chicken.
