one method of getting really tender, fall-off-the-bone ribs, is to boil them or pressure cook them in water with a couple of cups of vinegar. It helps the meat to break down while it cooks. When they are starting to fall off the bone, take them adn place them on the grill over low heat and slather on your favorite sauces or add your favorite dry rub seasonings. This is the way my dad makes them and it turns out perfect every time.

Easiest method I've found for delicious fall off the bone ribs with the least amount of hassle, is to give them your favorite dry rub the night before you want to put them in the smoker. I cut them to fit a gallon Ziploc and suck the air out before I put them in the fridge for the night. Takes more than one bag--so what. Rinse and save for left overs, IF there are any.
Soak your smoker chips for at least 30 minutes in warm water before adding them to the chip pan. Most important--I put a disposable foil pie pan on the bottom rack in the smoker with about 3/4" of whatever liquid you think is going to do work best. I use water, because my rub is not boring, and I haven't been disappointed yet, but hey, maybe I'll try some exotica next time.
6-7 hrs at 225 allows me to put 'em on, and go get something else done without a lot of babysitting. Love my Smoke Vault!

You need to cook the ribs first at a low heat inthe oven, or i even par boil mine first and then grill them for that char grilled taste and the fall off the bone texture.

Don't most peole boil the ribs before grilling. This cooks the ribs better and makes them tender.

I start by cooking mine in a pressure cooker
first, then move to grill to finish.
If you don't have a pressure coooker,
you could try steaming them until
most of blood is cooked away,
then transfer to grill.

If you're worried about stuff falling off the bone, put aluminum foil underneath.
To keep them moist, surrounding them might work too.
