the difference is in the amount of water passed through the grounds.

a 'long' pull (Lungo) is about twice as much water as normal, yielding a slightly weaker taste.

a 'short' pull (Ristretto) is less water than normal, yielding a stronger taste.

a short pull is to the count of 3. as in you hold the handle, 1-2-3 and a long pull is to the count of 5. this determines how strong the final product will be
