I'm a purist when it comes to potstickers -- are you steaming them or frying them??
1/4 Cup Soy Sauce
3 - 4 Tbs. Rice Vinegar
6 -12 drops of Red Chile Oil

Put in small covered container, shake, and enjoy.

I am a pampered chef consultant and we have done potstickers for one of our themed shows and here is the recipe for the dipping sauce that we use.
1/2 cup red jalapeno jelly melted in microwave
1/4 cup rice vinegar
2 tablespoons reduced sodium soy sauce

its really good and easy to make just melt the jelly then add all ingred. together and dip away

good luck and if you need any recipe ideas you can go to my website at

4 tablespoons soy sauce
1 teaspoon sesame oil
1 tablespoon Chinese red rice vinegar
2 teaspoons ginger, minced
2 teaspoons fresh cilantro leaves, chopped, or chopped green onion

prep:
combine all ingredients. for best results, prepare ahead of time to allow the flavors to blend. store in sealed container in fridge till ready to use. (use within 3-4 days)

or...ginger dipping sauce:

1/2 cup light soy sauce
1/4 cup red wine vinegar
2 teaspoons minced ginger
2 tablespoons brown sugar
2 spring onions (green onions, scallions), chopped

prep:
in small bowl, combine soy sauce, red wine vinegar and minced ginger. set aside.
in a small heavy saucepan, melt the brown sugar on high heat, stirring rapidly, until it is just melted, not burnt. add soy sauce and red wine vinegar mixture. bring to a boil until brown sugar is melted again ( it will harden temporarily when soy sauce mix is added) remove from heat, put in serving dish and garnish with chopped spring onions, serve with potstickers.

Hope this helps!!!!
