i have to cook dinner tonight. any ideas for a great meal?

Depends what people like, but spaghetti, a salad, some green beans and garlic bread is always a crowd pleaser. Or something like Steak and baked potatoes with a salad and vegetable. Or any kind of chicken or fish then add some veggies and a desert. Also try looking at http://www.recipezaar.com for some ideas.

Ziti noodles 1 box
chicken 2 pieces of breast
spinach (frozen)
mushrooms (you can leave this out)
mozz chz or an Italian blend
Parmesan
3 cheese spaghetti sauce 1 jar
oregano and basil

Cook noodles according to directions. Blend sauce, herbs, and cheese and add some to the bottom of the baking dish. Spread 1/2 of the thawed spinach over the top. Add 1/2 of noddles. Add more sauce mixture then chicken, sauce, remaining noodles, sauce, remaining spinach and the rest of sauce. Sprinkle with parm and bake until chicken is done.
App. 35 - 45 minutes

YANKEE POT ROAST
Pot roast using the slow cooker/crock pot is the only way to go!
Start it when you wake up, so by the time you get home, its ready!

2 lb chuck roast
1 pkg onion soup mix, dry
1 cream mushroom soup, campbells
2 stalk celery, diced
1 onion chopped
2 whole carrots, peeled and cut
4 potatoes, peeled and cut in 1/2
1 crushed garlic cloves
3 tbsp flour

In the crock pot, add cream mushroom soup, 2 cans of water, the lipton dry soup, flour and mix the ingredients well.

Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies. Add water to barely cover the veggies (remember the water level may go up during cooking!).

Cover and turn crock pot to medium/high.
Cook 6-8 hours and it will be so tender!

Get some boneless skinless chicken breasts, and cover them in Emeril's orange poppyseed sauce (something like that name) and some garlic powder. Bake them at 350 until they are done, and have a side salad and some steamed asaragus. The sauce STINKS when you open it and it tastes terrible, but after it cooks it is just great you will love it.

For a quick meal I always keep a box of zatarain's jambalaya rice in the pantry. You can add chicken, pork, turkey, hamburger, shrimp, etc. to it or eat it just like it is. We like to add black beans or red beans. It's a spicey rice dish for side or main dish. Have a green salad with it, fresh fruit bowl for dessert. Easy & fast.

spinach, mushroom lasagna w/ a mild and sharp cheese sauce, greek side salad with feta and olives, and hummus with pita bread. It's one of the best meals I've ever made, and a hit with guests !

last night i served a gazpacho, and then a roasted cherry tomato, roasted garlic cappellini w/sauteed zucchini, shallots, eggplant and shredded roast duck. you could buy a rotisserie chicken and substitute for the duck. served with a nice chilled white wine. cantaloupe sorbet for dessert.

tonight, because it is again hot as heck, grilled ahi tuna over a bed of mixed greens, lemon cucumber, beets, sweet corn.
