Fresh pasta with pancetta & broccolini, and sundried tomatoes...make sure to use 3-6 cloves of fresh minced garlic, a pinch or 2 of crushed red pepper. Dice 8 oz. pancetta, sautee until brown, remove from pan.
Put pasta water on to boil
Cut the broccolini into 1-2" pieces, leaving the flower tops in tact. Julienne 5 -6 sun dried tomatoe halves. Pit and quarter 10 -12 Kalmata olives. Sautee the stems for approx. 2 minutes in a bit of olive oil, toss in garlic, broccolini tops, pancetta, sundried tomatoes, olives, red pepper & salt, to taste.Cover and turn off heat. Meanwhile, put toast approx. 1/4 C pignole (pine) nuts and set aside. Boil fresh pasta in salted water until al dente. Drain, and place on platter/large pasta bowl, pour pancetta/broccolini mixture over pasta, drizzle with a bit of olive oil, and sprinkle with some freshly grated Parmesan/Romano cheese. Make sure there's a nice, light wine to go with this -- I enjoy a good chianti..not too heavy. Espresso and assorted biscotti is a nice dessert to enjoy over good conversation.

Try this one:
Shrimp Pasta
2 TBSP olive oil
1/2 onion, chopped
1/2 tsp. thyme
1/2 tsp. cayenne pepper
1/2 tsp. black pepper
1/2 tsp. basil
1 TBSP chopped garlic
1 TBSP Worcestershire sauce
1/2 tsp Tabasco sauce
2 C. diced peeled and seeded tomatoes
2 TBSP sugar
1/2 C. green onions, chopped
3 C. chicken or shrimp stock
1 lb. vermicelli pasta or linguine
1 lb. fresh shrimp, peeled and deveined (can substitute chicken)
1/2 C. grated Parmesan cheese
Saute the onion in the olive oil for approximately four minutes. Add the garlic and stir. Add thyme, cayenne and black peppers, and basil and cook at low heat for five more minutes. Add everything else except for the pasta, shrimp, and cheese, and cook over lowish heat for an hour.
Saute the shrimp in some butter and garlic until three-quarters cooked (pink, but not totally opaque). Add the sauce and cook for
an additional two minutes. Add the cooked pasta and toss well with the grated cheese. Serve hot.

Order some Chinese food and get back to your house before the date. Dump the different boxes of food into various pots and pans you have. Get dressed for the date, put on an apron. Dip your fingers into the old containers that held your meal and wipe on different places on your apron (one dish at a time),. When the time comes for your"special someone" to arrive, turn on stove to low settings. Answer the door quickly in your apron and get ready to serve and impress!

YANKEE POT ROAST
Pot roast using the slow cooker/crock pot is the only way to go!
Start it when you wake up, so by the time you get home, its ready!
2 lb chuck roast
1 pkg onion soup mix, dry
1 cream mushroom soup, campbells
2 stalk celery, diced
1 onion chopped
2 whole carrots, peeled and cut
4 potatoes, peeled and cut in 1/2
1 crushed garlic cloves
3 tbsp flour
In the crock pot, add cream mushroom soup, 2 cans of water, the lipton dry soup, flour and mix the ingredients well.
Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies. Add water to barely cover the veggies (remember the water level may go up during cooking!).
Cover and turn crock pot to medium/high.
Cook 6-8 hours and it will be so tender!

Chicken Quesadillas
2-3 whole boneless skinless chicken breasts
1/2 green bell pepper
1/2 red bell pepper
1/2 yellow bell pepper
1/2 onion
2-3tsp ground cumin
8oz of cream cheese
8oz shredded cheese (cheddar or fiesta blend)
10 flour tortillas
1 tblsp butter
Preheat oven to 350. Spray cookie sheets with nonstick spray. Set to side.
Cut chicken, bell peppers & onions into small peices. Spray skillet with non-stick spray and place all chicken, bell peppers, onions, and cumin in pan. Season with salt, pepper, etc (if needed) Cook until chicken is done.
While chicken,etc is cooking mix cream cheese and shredded cheese together until well blended. Putting it in the microwave for about 20-30 seconds will soften the cream cheese and make it easier to mix. Lay out all 10 tortillas flat. Place about 2 tblsp of cheese mixture on tortilla & spread on 1/2 of the tortilla (do not cover the entire tortilla).
After chicken mixture is cooked, scoop about 1/4 of a cup on to the cheese side of the tortilla. Spread out chicken mixture & fold the 1/2 of the tortilla over (the side that doesn't have anything on it). Repeat this process for all 10 tortillas. Place them on cookie sheets with VERY LITTLE overlap. Melt butter and wipe over folded tortillas with a basting brush.
Please in oven - bake for about 10 minutes. Enough to melt cheese and golden brown the tops of the tortillas.
After finished cooking, use pizza cutter and cut tortillas into 1/3 peices. Serve with salsa & sour cream.

Chicken fettucini. I put 2 chicken breasts in a baking dish and cover with sundried tomato salad dressing and cook until chicken is done. Cook your fettucini noodles and drain. Add chicken (cut up into small pieces, with the dressing it was cooked in) and a jar of roasted garlic alfredo sauce. Very yummy. Also make garlic parmesan bread to go with it. Mix up butter, minced garlic, and grated parmesan cheese and spread on italian bread.. cook in broiler until brown.

there is nothing like good old home fried chicken take a whole chicken cut it up get a paper bag not plastic put white flour about one cup in the bag put the chicken in the bag and shake till coated never add pepper to fried chicken until it is done or it will burn the chicken only add a little salt I use an electric skillet but a frying pan will do fill the pan with liquid cooking oil about one third up put heat on high to heat oil place chicken on hot oil turn down to medium cook till golden brown, turn over cook on other side till golden brown always cook chicken well done should take about 20 minutes on each side add seasonal and then pepper if you want. mashed potatoes go great with fried chicken take 3 large white potatoes peel and quarter put into boing water cook about 20 minutes on high poke potatoes with a fork to test for doneness after about 20 minutes they will be soft not hard when done drain off water completely put back in pot add one quarter cup of milk 2 tablespoons of butter sprinkle a little salt and pepper I use an electric mixer and whip my potatoes and then put a few more pats of butter on top, corn on the cob is great with fried chicken and mashed potatoes in a large pot boil enough water to cover corn place cobs in boiling water cook on high for 20 minutes always buy corn that has small kernals they are sweeter and white corn is the best drain off water when done top with butter salt and pepper bon appetite!
