The main difference (regardless of what everyone else so far has said!) is how the grains are dried. The making of Scotch whisky uses smoke to dry the grain, whereas the making of Irish Whiskey uses hot dry air. This is why Irish Whiskey has a much smoother taste, and Scotch is quite rough on the throat.

apart from the fact that scotch comes from scotland and the other from ireland.... Scotch is always matured for a minimum of 3 years by law whereas irish whiskey has a 2 year aging period by law.

Scotch whiskies have a strong smoky flavour because they are smoked over peat fired kilns. none of this in the case of irish whiskeys.

scotch whiskies are either blended or single malts where as irish whiskey's use a single grain base.no blends in their case.

Scotch Whisky is whisky which has been distilled and matured in Scotland. Irish Whiskey means whiskey distilled and matured in Ireland. The location is the difference.

You can buy Scotch Whiskey in an Irish bar but you can't buy Irish Whiskey in a Scottish bar

Never ever ever call an Irishman a Scott or a Scotsman Irish. OOOOUUUCCHH!!!
It's like the difference between Italian wine and French wine. American beer and Canadian beer.
The ingredients and methods of brewing are different and the taste is therefore different. To an everyday person the taste maybe subtle enough to not be noticeable. But there is definitely a difference.

Irish Whiskey is considered to have been distiled before the scots started distilling and is generally distilled up to three times as opposed to twice in scotland.... I believe that Bourbon the American equivalent is only distilled once... this in part accounts for the smoothness of Irish whiskey
