can i use brown suger instead of regular sugar?

Peanut Butter Cookies
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 cup peanut butter
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 cup flaked coconut

Directions
Preheat oven to 375 degrees F (190 degrees C). In a medium bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then mix in the peanut butter. Combine the flour, baking soda, and salt; blend in to form a soft dough. Mix in coconut. Drop dough by teaspoonfuls onto ungreased cookie sheets. Flatten each cookie using the tines of a fork. Bake for 12 to 15 minutes in the preheated oven. Cool on wire racks.



Peanut Butter Cookies
1 pound butter
1 pound 5 ounces brown sugar
7 ounces granulated sugar
2 cups peanut butter
1 tablespoon vanilla
3 eggs
2 pounds flour
1 1/2 teaspoons baking soda
2 teaspoons salt
1 cup salted peanuts (optional)

Preheat oven to 350°. Cream together butter, brown and granulated sugars and peanut butter until well mixed, add vanilla and eggs and mix. Sift together flour, baking soda and salt, add to creamed mixture and mix well. Stir in optional peanuts. Roll dough into tablespoon-sized balls, place on a baking sheet lined with baking parchment and flatten them with a wet fork to about 1/4-inch thickness. Bake for 10 to 12 minutes, until golden brown.

I wouldn't substitute processed, granulated sugar with brown sugar...too much molasses maends up making sticky cookies...you can substitute white sugar with turbinado sugar, but there will be crunchy sugar crystals remaining in the baked product.
