I boiled some peeled cut red potatoes for potato salad and left them out over night in the pot with the boiled eggs. Are the potatoes still good? They were out from 9pm to 5am. Please respond quickly before I make more and waist time or decide to serve them and get alot of people sick thank you

If you hadn't left them with eggs, I would've said yes. The eggs change things, I would not take a chance. They could have bacteria on them from the eggs.

If you want the health departments answer, i would have to say throw them out as they were in the temperature danger zone (40 - 135) for more than four hours. Even if it weren't for the sanitational issues i still wouldn't recommend using them based on the lack of quality of food it would produce.

If they were alone i would say they are fine but you left them with the eggs so no.

I'd just change the water. I think it would be alright. Just rinse well before mixing with the other ingredients.
