I discovered the joys of a good port about a year ago. I swear, unlike other wines, port tastes better a week of two after it meets the air. Is there any scientific or rational reason this might be true? Is there something peculiar to port that would account for this? By better I mean new flavors arise, familiar ones deepen, the nose expands.

let it warm and breathe for a few moments in your glass, but leaving it out will make it go flat and dusty tasting.

only true vintage port will improve in the bottle, and then only if treated with great care

regular port should be finished within a few days of opening

That must just be your peculiar taste, because oxidation is generally considered a negative in wine. However, port keeps after being opened better than any other wine.

You can open it for a little while to let it breath some and i recommend a good cigar with that.
