As a general rule, when using convection, turn your oven temp down 25ºF from what it says on the recipe. (if your recipe says to bake at 375º for 20-22 min,, bake in convection oven for 350º for 20-22 min.)

Now, using a dark pan can be a little trickier. You're supposed to cut the oven down 25ºF for a dark pan, no matter what type of oven. But using a dark pan in a convection oven does NOT mean to lower the temp 50ºF, or your food wont' cook. Lowering the temp 25-35º is ample, in my experience.

Depending upon what it is, sometimes I will leave the temp high on the conv. oven to shave cooking time off. This works esp. well on brief bakign tines, like for cookies and brownies.
