Some steamed greens (add butter, salt, pepper and dash of vinegar and tobasco) or wilted greens. To make Wilted Greens, tear up your washed greens (spinach, Swiss Chard, etc.) into a salad bowl. In a skillet, heat till smooth: - 2 T. bacon drippings - 1/2 cup vinegar (apple cider or other) - 2 T honey (or other sweetener) - 1 boiled egg, chopped - 1-2 pieces bacon, crumbled Sweeten or tarten (with vinegar) as necessary to taste. Pour over greens while still hot and toss. Delicious, nutritious, sweet, tart and a nice complement to a rich brisket. ******************** German Potato Salad - 1 lb boiled, chopped red potatoes (washed, skins left on) - 1/4 c. mayonnaise (adjust to taste) - 1/4 t salt (or to taste) 2 slices crisp bacon, crumbled 1-2 T fresh rosemary, chopped Stir together all ingredients. Serve warm or cold. Bon appetit!!! =)

Depending on how you are going to cook it... grilled: you could stuff it in different spots with whole garlic cloves and have garlic butter roasted cornon cob. Baked:just like pot roast with tater, carrots, and onions. Any veggie is good with Brisket.
