Joy's Taco Salad
"This is one of those 'some of this and some of that' recipes. I call this garbage salad because when traveling to a picnic I carry it in a medium (untreated) trash bag, and fill a container when there! You can substitute fresh jalapenos for the canned green chiles, if you like."

INGREDIENTS:
* 1 pound lean ground beef
* 1 tablespoon chili powder
* 2 cups low-fat salad dressing
* 1 cup ketchup
* 1 (1.25 ounce) package taco seasoning mix
* 1 head iceberg lettuce - rinsed, dried, and chopped
* 1 head romaine lettuce- rinsed, dried and chopped
* 3 large tomatoes, diced
* 1 green bell pepper, diced
* 1 yellow bell pepper, diced
* 1 bunch green onions, chopped
* 1 (4 ounce) can green chile peppers, finely chopped
* 1 (15 ounce) can kidney beans, drained
* 1 (15 ounce) can garbanzo beans, drained
* 12 ounces shredded Cheddar cheese
* 2 (14.5 ounce) packages corn tortilla chips
DIRECTIONS:
1. Brown the beef, drain, season with chili powder and set aside to cool.
2. Prepare the dressing by whisking the Miracle Whip, ketchup and taco seasoning mix together in a small bowl.
3. In a large bowl, combine iceberg lettuce, romaine lettuce, tomatoes, green pepper, red or yellow pepper, green onions, jalapeno peppers, kidney beans, garbanzo beans, half of the cheese, half of the crushed chips, dressing and cooled ground beef. Mix well, cover and refrigerate.
4. Just before serving, top the salad with the other half of the cheese and crushed chips. Serve with whole chips on the side.

This is a delicious, light salad that sets well on the tum-tum on a hot summer's day. To make a meal out of the salad, add a bit of sliced roasted chicken. You'll Need:
An assortment of greens (12 cups OR enough to fill a large bowl) (dandelion greens lend a unique delicious taste to this salad) As a note, these calories are pretty negligible - so add as much greens as desired of the following: any variety of lettuce/chives/parsley/spinach leaves.
1 can of drained mandarin orange slices (140 calories)
1/4 cup of chopped English walnuts (about 200 calories)
1 cup of Light Catalina OR Ranch OR French OR Thousand Island OR your favorite Salad Dressing (we're going to allow 40 calories per Tablespoon)
1/2 cup of grated cheese (use your favorite cheese) (about 250 calories)
1 can of black or green sliced olives, drained (about 140 calories worth)
1 cup of grated carrots (45 calories)
About 6 ounces of corn chips (about 200 corn chips or 1/2 of a 12-ounce bag)

Entire recipe contains about 2,400 calories and will serve 24 people generously for 100 calories per serving OR 12 people very generously for about 200 calories. To save even more calories, omit the nuts and substitute a couple of teaspoons of HULLED sunflower seeds or omit totally. In addition, you can use light or fat-free cheese to reduce calories as well as 'baked tortilla' chips. Olives may also be omitted.

It's called Taco Salad. Just make a big green salad with lettuce, onions, tomatoes and any other vegetables you like. Add cooled taco meat, shredded cheddar cheese and fritos. Dress with Catalina dressing. Catalina is a sweet French dressing.
