Famous people are people too ! They are no different, they walk, talk and go to the bathroom just like we do. Talk to them like you would anyone.

I've seen a good amount of famous people and for the most part I just do the "how are you?" and keep walking. The only ones I've had conversations with we talked about work, relationship status and sex (natch).
I'm not a person who gets star struck though.

When I was in the 4th grade I met Jessica Alba. She's the counsin of the chick who was my best friend at the time and she brought Jessica to our class to talk about her life and sign autographs. I recently hung out with Self-Scientific (hip hop group) & Planet Asia (hip hop rapper) they chilled with my brother and I all day. We joked around about Dr. Dre and he even called up Bun B while we were there. It was good times. I also saw Owen Wilson jogging down the street in Dallas. I didn't talk to him but still.

Thomas Church from "Sideways, Wings, or the new Spider-man 3" use to go to my dads restaurant and he would always order chicken fried chicken.

never met any actors but i met a lot of rappers, just told them i was a fan of their music.
