Leave the pantry door open, put some corn and seeds in there, sit back, and keep an eye out. Now, if you are wanting to CATCH him, and have the time to keep a close eye on the area, you can use a glue trap, because as long as you keep an eye on it, it will be humane, and some gloves to prevent bites, and a tub of warm water, will get the mouse off the trap. Then put him in a container, and keep him for an hour or two to help him calm down (he will be pretty stressed out after the trap) and to insure no injuries occurred.......then take the container to a local park or forested area, and let him run free.

PLEASE use a humane mouse trap, baited with peanut butter or a little cheese. You can usually find these humane traps in hardware or pet stores. Once the mouse is caught you can release it in a safe place outside.
If it were me I would take a look at the mouse once you catch it, to make sure it's not a female mouse nursing babies (that could be why the mouse got to your pantry in the first place). A nursing mouse would clearly show her teats on her belly (they have 10). It would be awful for her babies to starve to death somewhere if she was separated from them.

They're small and can fit almost anywhere. If it's not a pet then get a little box of mouse poison to put in the pantry. It will eat it and die, probably in the attic or the wall where it's actually living. It's only one, it won't smell.
