There is no such accepted assumption at all. In fact, the very names adam and eve are likely contrived in that adama means dust or dirt. Eve is rooted in the word like ova or ovum which means egg. So the names Adam and Eve really stand for originating parents, and that can be plural. In some ways all persons on the planet are alike. In some ways no two persons are alike and each is distinct, one of a kind. That is the mystery of life. The best we can do so far to go back to the origins of human life is to discover how and when approximately people fanned out over the planet, thus changes especially in skin colorations.

We are inclined to think that the Garden of Eden was actually in what is now called AFRICA.....If we knew what color skin God has, we may be able to come to a conclusion about the true race of Adam and Eve.....since we as sinners aren't supposed to be able to look into the face of God, I suppose we shall never know, unless, we are christians, and enter Heaven when we die, then and only then are we to see Him.
As for the biblical version of the different races, It is when Moses' son looked upon him naked, and obviously commited some type of incest that we were divided into skin of different colors,
as for dividing the nations (languages), it was when the people were building the tower of Babel, trying to reach heaven, that God, separated their tongues so they couldn't communicate with each other, thereby preventing them from completing the tower.

More than likely Adam and Eve were not what we consider white. If you will look closely at the Isreali people and people from that geographical area where we assume the Garden of Eden is/was located. They are more often than not, darker complected and darker hair. To answer your questions, in the Bible it talks about the tower of Babel:

Now, will it not be withheld from them, all that they have planned to do? 7 Come, let us descend and confuse their language, so that one will not understand the language of his companion". 8 And the Lord scattered them from there upon the face of the entire earth, and they ceased building the city. 9 Therefore, He named it Babel, for there the Lord confused the language of the entire earth, and from there the Lord scattered them upon the face of the entire earth.
This is why many people believe there are different races. When they scattered to the different parts of the earth, they evolved to adapt to their surrounding. Darker skinned where the sun is hotter and more fierce. Lighter skinned where there is more winter and less hot sunlight, etc...

The story of Adam and Eve is a parable. They "represent" the first people on earth, who very likely evolved over thousands of years (or one God day, if you wish). There is no way to tell what colour any of them were. Skin pigmentation evolved as a result of geographical location and the amount of sunlight exposure to the skin. The more sun exposure the darker the skin pigmentation to protect against skin cancer and ultraviolet rays. It is a natural protective measure of the human body.

Even most Christians with any sense of reality believe in micro-evoloution, or the adaptations of species to their environment. We have been on earth for thousands of years, it is bound to happen. It is a great design from God that we can all adapt.
If you studied genetics, you would know that white skin is recessive, that means that if you mate a light skinned person with a dark skinned person there is much less likelyhood that they will have a light skinned child than a dark skinned child. Light skin occurs from the lack of a gene for a certain skin pigment. That means white skin is a mutation, if a common one, just like different colors of eyes and hair. Albinos lack all the genes for any kind of pigmentation in their skin, hair or eyes. Mutations occur from damage to cells from many sources, including but not limited to radiation and chemical exposure.

Three possibilities that might shed some light on your question.
One possibility..Every color of man comes from centuries of each different culture's envronment. They skin and body over the thousand of years adapted according to how they had to live. If they for example lived outside mostly, the sun would cause them to become darker and darker. Take this thought and consider centuries upon centuries where with the passing of these many years, it is possible that the children that were born would be born with darker and darker skin.
Second possibility...When God caused the people of bable to speak in different tonugues, it might have been possible that He changes their appearance to go with their new tongue, which made it easier for them to identify with someone that they could communicate with.
Third possibility... God said that we are to love one another as He loves us. He loves us no matter what we look like or what language we speak. Could God have given us these differences in appearance so that we have that very same opportunity to love one another exactly as He loves us?

Well I wouldn't assume they were white, but in Adam and Eve they had the genetics to produce each race within them. Also this would have been hereditary because it was passed on to Noah, his wife, his sons, and their wifes.
