I am thinking about getting these knives and wanted to know how they are? If you do use them, are you a professional or experienced cook? I know they are expensive and I didn't want to buy knives without getting a few opinions. I was thinking of buying the block set. Thanks for the input!

I mispelled it. Sorry. It's supposed to be Katana. I hate when people mispelled stuff on here and then I just did. Ugh!

Hello.
I do not have the knives myself. I have never heard of Calphalon. I am Australian.

I bought the set of these knives, and was happy enough to add the honesuki and nakiri knife that are not included in the set.

The steel and the sharpness of these knives are great. Layered and forged Japanese steel is beautiful and yields fantastic sharpness, edge-holding and durability. These Katana series knives do not compare with the steel of the best Japanese cutlery, but the price of this entire set is less than price of one of the great knives.

The handle design is quite comfortable and really does encourage you to more naturally use more of the knife's blade (as advertised), but the design also leads to a rather awkward knife block with a stepped edge to accommodate the shape of the handles. I like the look of the knife bock, especially the bamboo, but the knives fit rather sloppy and at different angles. The black plastic handle material is rather soft, and I am not sure how well it will wear, but there are no signs of problem yet.

The aesthetic of these knives is very unique, and I like it. If you are a fan of the Asian look or materials, these knives might be a good pick.

Finally, these knives are really sharp, and have held their edges well with daily use. I have stopped using our old set of Chicago Cutlery, and strongly prefer the Katana series. The nakiri and santoku are used the most.
