Strawberry Cobbler #1
Dough
1 3/4 c unbleached white flour
1 tsp. salt
1 T baking powder
2 T sugar
6 T cold butter
3/4 c milk
Filling
1 c sugar
1/3 c unbleached white flour
1 tsp. salt
1/2 c water
3 T fresh lemon juice
2 qt. strawberries, stemmed, cut in 1/2
Topping
2 T brown sugar
2 T butter
To prepare dough: Combine flour, salt, baking powder, and sugar in bowl. Cut in cold butter until dough has the consistency of coarse sand (or use food processor). Add milk and gently knead just until a ball is formed. Refrigerate. Preheat oven to 400 degrees. Combine sugar, flour, and salt for filling. Slowly whisk in water and lemon juice. Stir into strawberries. Place fruit in 9" x 13" glass baking dish. Bake for 15 minutes, or until fruit is bubbling. Stir. Tear off 1/4 inch thick, half dollar size pieces of dough; place on top of berries; covering the entire surface. Dot with 2 T butter, sprinkle with brown sugar. Return to bake 30 minutes or until golden brown
Strawberry Cobbler #2
Ingredients:
For the Strawberry Filling
5 cups fresh strawberries - cleaned and sliced
3/4 cup sugar
3 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
Vegetable cooking spray
For the Cobbler Topping
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup plain nonfat yogurt
2 tablespoons fresh lemon juice
2 tablespoons margarine - melted
1 teaspoon vanilla extract
2 egg whites
Directions:
For the Strawberry Filling
Combine first 5 ingredients (strawberries through vanilla extract) in a bowl; stir gently. Spoon strawberry mixture into an 11 x 7 x 2-inch baking dish coated with cooking spray; set aside.
For the Cobbler Topping
Combine flour, baking powder, and baking soda in a bowl; stir well, and set aside. Combine yogurt and next 4 ingredients (lemon juice through egg whites); add to dry ingredients, stirring just until dry ingredients are moistened. Drop dough by the tablespoon onto the strawberry mixture.
Bake at 400 degrees for 30 minutes or until filling is bubbly and crust is golden. Serve warm.
Strawberry Cobbler #3
1/2 c. sugar
1 T. cornstarch
1 lb. fresh or frozen strawberries, cut and drained
3/4 c. reserved strawberry juices
1/2 tsp. vanilla extract
1 1/4 c. flour
3 T. sugar
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1 egg
1/2 c. buttermilk
1/2 c. margarine, melted

Preheat oven to 375 degrees. In a medium saucepan, mix the 1/2 c. sugar and the cornstarch until no lumps remain. Stir in the strawberry juice (if you don't have 3/4 c. strawberry juices, add enough water to make 3/4 c.) and cook over medium-high heat. Stir constantly until mixture bubbles and thickens. Remove from heat and add vanilla extract and strawberries. Mix well and keep warm. In a medium-sized bowl, mix flour, 3 T. sugar, baking powder, and baking soda. Add the egg, buttermilk, and butter. Mix until just moistened. The batter should be lumpy. Pour the warm strawberry filling into an 8" square baking dish. Add large spoonfuls of the batter to the top of the fruit until it is completely covered. Sprinkle the top of the batter with sugar. Bake for 25-30 minutes or until the topping is lightly browned. Serve warm with vanilla ice cream or whipped topping.

how about Dump Cake instead- it is so much like a cobbler.
Take a 9X13 inch pan. Spray it with pam cooking spray. Dump all your strawberries in the pan spread a can of strawberry pie filling over top of it. Sprinkle one box of white cake mix over top of it (dry). Drizzle 1 stick of melted butter over top of that and sprinkle 1Cup of chopped pecans (or other nuts) over top. Bake in 350 degree oven for 45 minutes. Serve warm or cold.
Very easy and very good. No dirty bowls everything goes from the can to the pan in layers. I've also added a can of crushed pineapple before to the first layer but you have the strawberrries to take the place of that. Different fruit pie fillings can be substituted for the strawberry if you want to try a different flavor later. So if you were to try blueberry later add the can of crushed pineapple to the blueberry pie filling.
