the cake has a layer of raspberries and strawberries with fresh whipped cream between two layers of chocolate cake, covered entirely with chocolate ganache,,,,if i make it tonite and we have it tomorrow , will the whipped cream hold up?

Yes as long as you keep it refrigerated until you serve it. Whipped cream is afterall "Cream" a dairy product that needs refrigeration.

Ganache also has cream in it.

Make sure you dry your fruit thoroughly before assembling it in the cake. A corn starch based gel will help it stay fresh in between the layers. Consider using thhis or a dab of jam from the same type of fruit. Use strawberry jam and rasberry jam to glaze your fruit first.

Speaking from experience, NO!

It will turn into a giant, soupy mess. The whipped cream soaks into the cake and the fruit starts to soften and the juices soak into the cake. I guess the only thing to do is make the cake to a point where all you have to do is whip the cream and assemble the cake.

It would be better if you had any time at all to do it tomorrow. If not, it sounds too good to be hurt much because the whipped cream is a little melted. My mom sometimes uses a little corn starch when she whips the cream to give it a little more body.

a good way for the cake to hold up untill the next day...is to chill all the ingredients...i mean after you baked the cake..put it in the fridge..and obviously keep the cream chilled...but if everything is cold...then theres less of a chance of it "melting"..so to speak..so yeah...just throw it in the fridge and do not disturb and it should be fine..

Whip the cream until it is super stiff and it will hold up as long as you keep it in the fridge.

I have no clue, but it sounds damn good though!!! I don't think that fresh whipped cream would hold up, but I am not a pastry chef either. Good luck :)

If it's kept in the fridge
but you might consider making the cake and slicing everything today, then putting it all together tomorrow? Good luck and sounds YUMMY!

The cream will hold, but the natural juice from the berries will make your cake soggy....
