A mammock is a shapeless piece or a fragment. I'm not sure how we can relate this to cooking. But if a recipe instructs us to remove mammocks of somethings, I think they're trying to tell us to remove unnecessary things that shouldn't go into the pot. Also, when the word mammock is used as a verb, it means to tear to pieces.

If I had to guess, I would say that that meant hamhocks, which is a piece of meat with the bone in it used to add flavor to beans and other dishes when meat was very scarce or expensive.
