I've never used cream corn in my life and have no ideas how to eat it. Any good recipes for it?

Corn fritters
1 can cream corn
2 beaten eggs
3/4 cup flour
3/4 tsp. salt
1/4 tsp pepper
1 tsp baking powder
Combine all the ingredients and drop by tablespoons into 1 inch of melted shortening. Brown on both sides turning once.

Baked corn
1 an cream corn
2 eggs
1 cup milk
1 Tbs. flour
1 Tbsp sugar
1/2 tsp salt
dash pepper
2 tbsp. butter, melted
mix all together and pour into a 1 1/2 qt. casserole dish
mix 2 Tbsp melted butter with 1/2 cup bread or cracker crumbs and sprinkle over the corn mixture
Bake at 350 for 40 minutes or until a knife inserted in the middle comes out clean

OR
You can heat with salt and pepper and use for gravy on your mashed potatoes
OR
Add to pancake mix in place of the milk, Add to cornbread with a chopped tomatoe and some jalapino peppers and cheese.

Peel and dice a medium potato. Put that in a 2 1/2 quart saucepan and add enough water to just cover the potatoes. Bring to a boil, then reduce heat and allow to simmer for five to seven minutes (your potato dices should be about 1/2 inch on a side). Dump in that can of creamed corn, add a pinch of salt and pepper, onion powder and about a teaspoonful of parsley flakes. What you have is called "Potato-Corn Chowder" and, served with a nice warm buttered biscuit it'll fill ya right up. Some folks prefer to take half a small onion and chop that up and put a tablespoonful of that in with the potatoes when they first start cooking. Some also add a pinch of garlic powder. These last two ingredients aren't absolutely essential, but they'll give ya a bit of an option on flavorings. Hope y'like this as much as my family does! And hey - its' big advantage - it's a real moneysaver!

My father likes to eat it over mashed potatoes. Both warm!

Makes: 6 servings



2 cans (14.75 oz. each) cream-style corn

1 cup MINUTE White Rice, uncooked

1 egg, lightly beaten

1/2 tsp. salt

1/8 tsp. black pepper

1/8 tsp. ground nutmeg (optional)


PREHEAT oven to 375°F. Mix all ingredients in large bowl.

POUR into greased 9-inch square baking dish.

BAKE 25 minutes or until liquid is absorbed.

Cream corn can be mix with corn bread mix, it'll make a side dish for corn bread or muffins.

Corn on the cob-my family also likes this along with whole kernel corn. Cream style corn reminds me of vomit, so I don't have it with dinner or lunch.

You can add a little cream or milk and make a soup or what some people call corn chowder.

corn muffins or corn pudding...look for recipes on the net. I've had it and made it before and it makes both very moist.

Creamy Skillet Corn

INGREDIENTS:
3 tablespoons butter
1/4 cup shallots, minced
1 pinch sugar
2 cups frozen corn kernels
2 tablespoons water
1/2 cup whipping cream
1 pinch ground nutmeg
salt to taste

--------------------------------------------------------------------------------

DIRECTIONS:
Melt butter in a large skillet over medium heat. Add shallots and sugar, and saute for 2 to 3 minutes. Stir in corn and water, and cook until tender, about 5 minutes. Gradually stir in cream, and cook until cream is reduced and sauce thickens, about 8 minutes. Season with nutmeg, salt, and pepper.

*NOTE: Since you already have a can of creamed corn OMIT the whipping cream
