I really need some ice-cream recipes - any flavour. Chocolate, cookies 'n' cream, vanilla - anything will do.

1 tin of condensed milk, chilled
300 mL light cream
300 ml thickened cream
1 teaspoon vanilla essence

Pour the ingredients into a mixing bowl and whip until double in size, and then pout it into a chilled ice cream container and freeze. You can also melt cooking chocolate instead of using vanilla essence if you want chocolate ice cream.

OLD FASHIONED ICE CREAM

2 cups heavy cream
2 cups half n half
3/4 cups sugar
4 beaten egg yolks
2-3 inch vanilla bean and/or 2 tsp. vanilla extract

Heat the cream, half and half and sugar in a heavy sauce pan stirring 2 - 3 times until the sugar is melted. Do not boil.
Beat the egg yloks in a small bowl and pour some of the hot mixture in and beat some more to mix. Add the yolks to the cream in the pot and cook stirring constantly over medium heat until thickened slightly. Do not boil.
Pour into a clean bowl and scrape in the seeds of the vanilla bean. cover and chill.
Stir before adding to the freezer and use the directions that came with the freezer.
CHOCOLATE
Melt together 3 oz. semi sweet chocolate and 1 ounce unsweet chocolate. Add to the hot milk before adding thre egg yolks. proceed as directed above.
OTHER ADDITIONS
Add 1 cup crushed cookies, candy bars, pie, chocolate chips, nuts etc, to partially frozen ice cream and continue freezing as directed.
