Delicious!!! And not in any way a kind of cookie!

It's a cross between a pancake and an "English" muffin (American). It's the size of a muffin, but it's made from a batter that is poured into a ring mold on the top of a hot griddle. It has a smooth side and when ready and flipped, all the bubbles that rose to the top before now burst and create lots of holes for the butter and jam to melt down into.

HIGHLY recommend them, well toasted, with butter and raspberry jam.

CRUMPETS

4 cups all-purpose flour
2 tablespoons salt
2 tablespoons of dried yeast
2 1/2 cups warm water

Sift together the flour and salt. Mix the yeast with a few tablespoons of the warm water. Whisk three-quarters of the remaining warm water into the flour and then add the yeasty liquid. Cover and leave in a warm place until the mixture has risen.

Once risen, check the consistency. If the batter is very thick, loosen with the remaining water. The batter should now be left to stand for 8-10 minutes.

Warm a non-stick frying pan on a low heat. Butter some crumpet rings or small tartlet rings (or cut the top and bottom off a tuna can).

Place the rings into the frying pan and pour in some of the batter until half-full (1/4 to 1/2 inches deep). Cook on a low heat until small holes appear and the top has started to dry. The bottom of the crumpet will now be golden and it can be turned over and cooked for another minute. The crumpets are now ready for lots of melting butter!

Makes about 20

Note: The crumpets can be cooked without turning; simply cook until the tops are completely dry. Some finely grated zest of lemon can also be added to the batter to give a lemon bite. If you do so, I'd suggest you add a 1/4 - 1/2 tsp of sugar (or to taste) to compensate.

Delia Smith lists the following ingredients as being sufficient for 16 crumpets:

12 fl oz milk
1 tbsp yeast
1 tsp castor sugar
1 tsp salt
8oz plain flour


In the UK, "crumpet" has been used since 1936 as a slang term for a woman (or, more recently, a man) regarded as an object of sexual desire.

they are round bread thingy's that u have to toast - lovely with butter and cream cheese or jam! very english I think - we have them or breakfast or just a snack in the day.
