First, know that there are nerves leading directly to the brain just above the roof of your mouth. When the sudden change of temperature hits the roof of your mouth, these nerves get chilled and you get this "brain freeze." Licking the roof of the mouth supposedly eases the pain, as it heats the nerves back up.

Just has to do With quick temp. fluctuation. When it happens, press your tongue up against the roof of your mouth for a few moments and the feeling will go away. Works with "brain freezes too" from ice cream.
