I dont have a lot of knowledge on cheese though a lot of varieties are available near where I live and I want to start serving/using these cheeses, just as soon as I know what's what!

OH, cheese and fruit and crackers...the best. Brie is really nice. it's a soft, mild cheese. Blue cheeses are tangy and I love them. Basic cheddar is always good and if you are in the UK get some Wensleydale with cranberries in it if you can find...dreamy. Just start experimenting, you will have fun. I have met very few cheeses in my day that I don't like. Have fun!

Bit predictable but i've found ya can never go wrong with some very mature cheddar, goes lovely with crackers too. Failing that, try the Norwegian cheese Jarlsberg. Its a bit like Edam but with a nicer taste

brie
camembert
a blue cheese, like roquefort
maybe a cream cheese log
a soft cheese with some fruit in it, like ricotta with apricots (i like to call it apricotta)
then maybe a mature cheddar or smoked cheese
