Kheema Samosa
Ingredients:
1/4 kg kheema ( minced lamb)
2 onions, chopped
2 tsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp chili powder
2 tsp coriander powder
1 1/2 tsp cumin powder
150g frozen green peas
2 tbsp desiccated coconut
1 tsp garam masala
4 green chilies,finely chopped
1 tbsp coriander leaves, chopped
1 tbsp lemon juice
2 tbsps oil
Salt to taste
For Samosa Pastry:
250gm maida(all-purpose flour)
50gm ghee or butter
1/2 tsp salt
Warm water as required
Oil for frying
Method:
Sieve the maida with salt add liquid ghee or butter to the maida,rub in well and make a soft dough using little water. Keep aside for 30minutes.
Heat the 2 tbsps oil over medium heat and fry the onions till light brown.
Add ginger-garlic paste and green chilies,fry and add turmeric, coriander, cumin, chili powder,and fry.
Add kheema,fry until the kheema is lightly browned.Add the green peas.
Add water, and bring to a boil. Cover and simmer for 25-30 minutes.
If there is any liquid left, remove the lid and cook over medium heat until it is completely dry, stirring frequently
Stir in the desiccated coconut, garam masala, and coriander leaves.
Remove from heat and add the lemon juice and allow to cool .
Make small balls from the dough, roll into thin round shape. Cut into two halves with a knife to make semicircles.
Moisten the straight edge with little warm water.
Fold the semicircle of the pastry in half to form a triangular cone.
Join the straight edges by pressing them hard into each other.
Fill these cones with the prepared filling, leaving some space on the top of the cone. Now moisten the top edges and press them hard together.
Deep fry the samosas until they are golden brown and drain on absorbent paper.
Serve hot with green chutney and tamarind date chutney.

Stay away from the oven and use a slow cooker! If you start the slow cooker at 8 am, it will be done by 4
SALAD, YANKEE POT ROAST AND JELLO!
SPINACH SALAD
3 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market
1 c dried cranberries
1/2 cup chopped pecans or walnuts or both.
1/4 c sunflower seeds
feta cheese
a viniagrette dressing
Mix ingredients together and add dressing before serving.
YANKEE POT ROAST
Pot roast using the slow cooker is the only way to go!
5 lb chuck roast
2 pkg lipton onion soup mix, dry
2 cans cream mushroom soup, campbells
1 whole celery bunch, diced
2 onions, diced
4 whole carrots, peeled and cut
5 potatoes, peeled and cut in 1/2
1 crushed garlic cloves
5 tbsp flour
1 Reynold's slow cooker liner, optional
The slow cooker liner makes cleaning up a snap!
In the crock pot, add cream mushroom soups, 2 cans of water, the lipton dry soups, flour and mix the ingredients well.
Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies. Add water to barely cover the veggies (remember the water level may go up during cooking!).
If potatoes won't fit, then cook them separately (ie: roast, mashed, etc.) Cover and turn crock pot to medium.
Cook 6-8 hours and it will be so tender!
JELLO DESSERT
3 pkgs large jello, same flavor
2 coolwhip
fresh fruits
Make the jello as on the package but use 1/2 cup less water per package. In a non metalic bowl, add jello and Add fresh fruit like fresh strawberries, grapes, chopped apples. If you make it in the morning, Let it chill for 4-6 hours. Mix up the jello and add 1/2 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.
Serve in glass cups and top with more fresh fruit.

RITZ CHICKEN CASSEROLE
6 chicken breasts
2 cans cream of chicken soup
1 tube Ritz crackers
8 oz. sour cream with onion
1 tsp. celery seed
1 1/2 stick butter
Boil breast until tender; remove skin and bones and cut into small pieces. Spread in buttered casserole. Crush crackers and add celery seed. Spread over soup. Melt butter and pour over all evenly. Bake 20 to 30 minutes at 350 degrees until hot and bubbly. Hint: This is a very rich dish - lower calorie butter or imitation sour cream may be substituted without altering flavor.

BUSY NIGHT CHICKEN
Serves 4
Ingredients:
4 chicken breasts
1 to 2 teaspoon garlic salt
Methods:
1. If chicken breasts are frozen, defrost in microwave for 10 minutes.
2. Put chicken breasts (skin side up) in a baking dish. Sprinkle both sides with garlic salt.
3. Bake at 400 degrees for 30 minutes or until skin is crisp and chicken is not longer pink.

Laksa (Coconut Curry Soup..tastes like Thai Red/Green Curries)
Buy some Laksa Spice Paste (at most supermarkets in the oriental section) Comes in satchets..
1 satchet (or if buying in a jar - maybe 2 1/2 TBS)
You simply fry it up on the pan (the spice paste) with
1TBS Oil, add 1 can coconut milk and 1 can chicken stock...heat..(only takes 10 mins) To serve, add some vermicelli rice noodles (cooked for 2 mins in boiling water) and poor soup over top...you can also add chicken....and crunchy bean shoots on top.....
Looks great served at a dinner party also in nice black bowls....Tastes like you slaved away for hours but only takes 15 mins!
And is not too much to remember...no big recipes to follow!
