Use only one cup of water rather than the amount your white cake mix calls for.

Then, add one extra egg white and a little
almond extract (1/2 teaspoon).

Use the same amount of oil it calls for, plus 1 extra teaspoon.

Beat well as directed on your cake mix.

Pour into greased and floured metal cake pans.

Now here is the secret to that fabulous texture and softness.

Lightly "slam" your cake tins on a hard surface to remove as many as those air bubbles
as possible.

I do this several times and wait and watch the bubbles come to the surface.
You will see them burst.

Do this again to be sure you are getting rid of
those large bubbles.

Be sure your oven has been preheated.

Bake as directed.

You will have a nice small textured, soft and elegant cake.

A cake from scratch will use Cake flour. It is a softer and finer ground flour. It also has a lower protein content. It is used when you want a softer texture to a cake and used in more delicate cakes like an angel cake or chiffon cake. Baking is more of a science and you must follow the amounts correctly. Or you could end up with a big flop on your hands. Another thing people do not do is sift the flour when baking. Sifting makes sure that there are no lumps or hard pieces of flour in the mix. Below is a great cake recipe. And it doesn't come from a box. It is worth the effort and time.

Sure you can, just use a smaller baking pan for the top tier. Maybe make a 3 layered cake with the varying sized cake pans. I've thought about making a sea-blue colored icing with a bit of blue food coloring mixed with vanilla buttercream icing. Then I would pipe some colorful fish along the sides. Or just traditional white will be nice too. Have fun on the beach!

I have no idea, but I would LOVE to find a good recipe for wedding cake. Not that I could actually bake it properly or anything though. Wedding cake is absolutely delicious!

oil and eggs make it moist but its the flour and baking proccess that determines texture. When you make a cake from scratch be sure u use cake flour .

I always use buttermilk in any cake recipe , it makes cake so moist
