I have two favorites, and I highly recommend them:

Cave-aged Gruyère (sounds like groo yair), and horseradish cheddar.

Let me try to describe the Cave Aged Gruyère: It's smooth, and dense in texture, with a mellow nutty flavor initially, which becomes a slightly sharp bite similar to parmesan to finish. It goes well with most crackers, and slightly sweet white wines like rieslings. I've also seen some fine restaurants in my area cook with it.

The horseradish cheddar is exactly what it sounds like...fairly spicy hot horseradish bite mixed with the familiar cheddar flavor. I love cheddar, and I love horseradish, and this is a match made in heaven. I could hardly believe my eyes when I spotted it in the grocery store! I love to pair it with some of the richer ales.

If you're interested in expanding your horizons I suggest trying both!

It's a toss up among Greek feta, and English stilton. I love the more potent cheeses. Sadly I've long gone vegan for lent so are not able to consume cheese for yet another three weeks. I particularly omit it! Can reside with out chocolate however cheese is particularly problematic to quit. First factor I'm going to consume on Easter Sunday is a giant wedge of stilton with crackers.

I like harder/blander cheeses like Swiss or Edam with apple slices.

With crackers, I tend to go for the Camembert or a goat Brie--soft and creamy.

Muenster cheese....it has a really yummy flavor and texture, and it looks cool. The name doesn't hurt either!

Heluva Goods Sharp Cheddar..it tastes soooo good lol but i love cheese:-D lol i love them all but thats my fav.
