Keep it in the freezer, until you are ready to use it. When you want to serve the Ciabatta Bread, wrap the frozen bread in tin foil, and put it in a 325 degree oven, until it is warm, all the way through. This usually takes between 12 and 15 minutes. When you remove it from the oven, it will be perfect, and it tastes so so good.

the artisan breads like ciabatta contain no preservatives and just don't have the shelf life as packaged bread. They only stay soft a day or two and are meant to be eaten right away. Use up in stuffing or bread pudding if it starts to harden on you. Or make some homemade croutons.

It turns out that bread gets stale 6 times faster in the fridge than at room temperature. Which is why you should freeze it until you are ready to use it. Going stale is actually caused by crystalization of starches, not by drying out---what this means is that sometimes you can re-soften the bread by warming it in the microwave for a few seconds, which melts the crystals. But the effect only lasts a short while.

That sucks, you should take it back. Do they really expect you to eat it that fast? We use it a lot at my work, but I'm pretty sure you should be able to have it for a little while longer. But since that's what happened, I'd say keep a few out and put the rest in the freezer, if you need it, take it out in the morning and let it thaw. Hopefully that works.

Close the bag where you keep it very tightly and store it in the refrigerator. If you are not going to eat it all right away then freeze it.
