Taco Pie.

1 package cresant rolls
corn chips
shredded mexican blend cheese
1 pound chicken or ground beef
1 onion
black olives
salsa
sour cream
taco seasoning

Make the meat, drain, do what the taco seasoning packet suggests. Line a pie pan with the cresant rolls., add a layer of crushed corn chips, them meat, then cheese, then more chips, meat and cheese. Oh, put the oniosn in the meat when you cook it! Add anything you want on top, tomatos, olives, whatever. Bake at 350 for 30 minutes or until crust is done and serve with salsa and sour cream. You could make the top crispy with more chips before baking.

Hamburgers

I just made these lazy galumpki's or lazy stuffed cabbage casserole and it was sooooooooooooooo good.
1 1/2 lbs raw hamburger
1 onion chopped fine
1 egg
salt & pepp
2 cups cooked minute style rice.
2 tbsp soft butter.
Mix all that in a big mixing bowl.

chop about a half of a large head of cabbage kinda of a big chop, not fine.

grease a 9 X 13 pyrex, layer 1/2 of cabbage, 1/2 of meat mixture, and repeat. Then pour most of a can of 28 oz of tomato sauce over top. Cover with foil and bake 1 hr. Uncover bake 1/2 hr more.

Dessert I made my own brownie neopolitan sundae. Take one brownie and a scoop of neopolitan ice cream (or your favorite flavor). Drizzle heated hot fudge over and around dish. Sprinkle with chopped nuts and a couple cherries. I made mine in wide pasta bowls and made it look like a dessert from a fancy restaurant. I make my own brownies but boxed ones would surely work too.

I got some. They are all for the hot summer season. I hope that you will like them.

Prawns and vegetable stir-fry

Ingredients
1 tsp chilli powder
2 garlic cloves, finely chopped
3 cups mixed vegetables, cut Chinese style for stir-fry
3 tbsp cooking oil

To marinate the prawns
1/2 kg prawns
1/2 tsp salt
1 tbsp lemon juice

To make sauce
1 tbsp cooking oil
1 tsp sugar
1 pinch Chinese salt
1 tbsp tomato ketchup
4 tbsp soya sauce
Salt to taste
1/4 cup water

Clean and de-vein the prawns. Wash thoroughly and drain excess water. Take the prawns in a mixing bowl, add salt and lemon juice, mix well and put aside for 10 minutes.

METHOD
In a small mixing bowl, add all the ingredients for the sauce and mix well. Put aside. Now, heat oil in a wok on a high flame. Add the chopped garlic and mixed vegetables. Fry on high flame for a couple of minutes or until the vegetables are slightly cooked.

In another wok, heat a little oil and fry the prawns for five minutes. Add the sauce and pepper powder and cook for five more minutes. Add all the fried vegetables, mix and fry on high flame for a couple of minutes more. Serve hot.

Chicken masala roast

Ingredients

1 chicken, cut into bite size pieces
1 lemon, halved
8 small onions, peeled
4 cloves of garlic, crushed
1 tbsp ginger, grated
1 tbsp honey
3 tbsp oil
1 tsp red chilli powder
2 tsp cumin seeds
1 tsp coriander seeds
½ tsp all spices powder
250 ml yoghurt

Method

Pre-heat the oven at 180°c. Place chicken, lemon and onions in a baking dish. Mix together all the remaining ingredients and pour over the chicken. Cover with foil and roast for an hour. Remove foil 15 minutes before taking out the dish from the oven.

Desert:

CARDAMON ICECREAM

Ingredients

1 litre milk
1 tsp cornflour
1 cup sugar
1/2 tsp cardamom powder
A few saffron strands

For the strawberry sauce

1/2 cup strawberries, crushed
4 tsps sugar, powdered

Method
Soak the saffron in a little warm milk and keep aside. Dissolve the cornflour in one tablespoon of milk and keep aside. Boil the milk and let it simmer over medium flame, stirring continuously till the milk reduces to three-fourth little more than half the original quantity.

Add the cornflour solution, sugar and bring to a boil. Simmer for five minutes. Cool completely. Add the saffron mixture, cardamom powder and mix well. Pour into a freezer-proof bowl and freeze for about four hours. Remove and blend in the liquidiser to break all the ice crystals till the mixture is smooth and creamy. Pour into six kulfi moulds and freeze overnight until it sets.

To unmould, allow the moulds to remain outside the refrigerator for five minutes and then unmould by inserting a wooden skewer stick or a fork in the centre of the kulfi and pulling it out. Serve topped with the strawberry sauce.
To make strawberry sauce, blend the strawberries well with sugar.

I have a GREAT 4th of July dessert recipe...

FRUIT PIZZA

You use one package of (rolled up) sugar cookie dough
One package of cream cheese
One tub of cool whip
sugar to taste
Blueberries and raspberries

You roll out the cookie dough onto a cookie sheet so it is a rectangle. Cook it according to the package directions.
In a bowl mix the cream cheese, cool whip and sugar to taste (should be sweet but not too sweet).
When large cookie comes out of oven, cool it....
Once cool spread cream cheese mixture over entire cookie.
Decorate with raspberries and blueberries into the shape of the American flag. It looks great and tastes delicious!!
