Gingerbread People Cookies Recipe
2 1/4 cups all-purpose flour
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
6 tablespoons granulated sugar
1/4 cup butter or margarine, softened
1/2 cup molasses
1 large egg white
cooking spray
2 tablespoons dried currants
1 1/4 cups powdered sugar
2 tablespoons lemon juice
1/4 teaspoon vanilla extract
48 servings 48 cookies
1 hour 30 minutes 1 hr prep
Lightly spoon flour into dry measuring cups; level with a knife.
Combine the flour and next 7 ingredients (flour through cloves) in a bowl, and set aside.
Combine granulated sugar and butter in a large bowl; beat at medium speed of a mixer 5 minutes.
Add molasses and egg white; beat well.
Add flour mixture to sugar mixture; beat at low speed until well-blended.
Divide dough in half, and shape each half into a ball, and wrap in plastic wrap.
Chill 1 hour.
Preheat oven to 350°.
Working with 1 half of dough at a time (keep remaining half chilled until ready to use), roll the dough to a 1/8-inch thickness on a heavily floured surface; cut with a 2 1/2-inch boy or girl cookie cutter.
Place gingerbread cookies 1 inch apart on baking sheets coated with cooking spray.
Arrange currants on cookies as buttons.
Bake at 350° for 8 minutes.
Remove from pans; cool on wire racks.
Combine the powdered sugar, lemon juice, and vanilla in a small bowl.
Spoon into a decorating bag or a heavy-duty zip-top plastic bag with a tiny hole snipped in 1 corner of bag, and decorate as desired.

INGREDIENTS:

* 1 teaspoon baking soda
* 3/4 teaspoon ground cinnamon
* 1/2 teaspoon ground cloves
* 1/4 teaspoon salt
* 3/4 cup margarine, softened
* 1 cup white sugar
* 1 egg
* 1 tablespoon water
* 1/4 cup molasses
* 2 tablespoons white sugar
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
2. In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

Byerly's Restaurant Gingerbread Men
1/2 cup butter or margarine, softened
3/4 cup granulated sugar
1 egg
3/4 cup light molasses
Grated zest from 1 orange
3-1/2 cups flour
1 teaspoon baking soda
1-1/2 teaspoons ginger
1-1/2 teaspoons cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground cardamom
Cream butter and sugar. Beat in egg, molasses and finely chopped orange peel. Blend in remaining ingredients. Refrigerate, covered, for several hours or overnight. Preheat oven to 375 degrees F. Roll dough on floured surface to 1/8 inch thickness for crisp cookies or 1/4 inch thick for softer cookies. Cut out with gingerbread man cutters. Place one inch apart on lightly greased baking sheets. Bake until lightly browned; start checking after 6 minutes, as they burn quickly. Cool and decorate as desired.

I made these for years with my kids using a gingerbread boy, then gave it smarties for eyes licorice for its mouth, just all good fun
5 cups flour
1 tablespoon ginger
1 tablespoon baking soda
1 cup margarine
1 cup brown sugar, firmly packed
2 large eggs
1 cup molasses
2 tablespoons vinegar
20 minutes 10 mins prep
1. Combine first 3 ingredients in bowl.
2. Cream margarine, add sugar then eggs one at a time.
3. Now add the mollasses& vinegar.
4. Mix in the flour.
5. Roll out& use cookie cutters.
6. Bake 10-12 minutes at 350°.
7. After they are baked you can decorate the way you like.

I have always had good luck with the Martha Stewart recipie, you can find it on her web site( I think) It is easy for kids to work with nd tastes pretty good as well.
