This is not a properly worded question, the Disciples WERE NOT THE ONLY PEOPLE TO SEE JESUS after the resurrection. The very first people to see Jesus resurrected were women. Mary the mother of James, Salome, other women (names unknown) and Mary Magdalene.
The reason why 11 disciples saw Jesus after the resurrection is because the 12th (Judas Iscariot) was no longer with them. According to the Bible, Judas killed himself. Accounts listed in Matthew and in Acts. In Acts, Matthias became Judas's successor.
Also at the ends of Luke and in Mark, Jesus appeared to some disciples and a man named Cleopas on the road to Emmaus, but they didn't realize it was him until later. Even Thomas doubted him at first but all of them would believe and proclaim the word of God for the rest of their lives.

Soon the apostles were back in Jerusalem. (1:12-26) In an upper chamber (perhaps in the home of Mark’s mother, Mary), the 11 loyal apostles persisted in prayer with Jesus’ half brothers, his other disciples, and his mother, Mary. (Mark 6:3; James 1:1) But who would receive Judas’ “office of oversight”? (Psalm 109:8) About 120 disciples were present when God chose a man to replace Jesus’ betrayer, Judas, restoring the apostolic number to 12.
The choice had to be one who was a disciple during the time of Jesus’ ministry and a witness of his resurrection. Of course, the man also had to acknowledge Jehovah as his Ruler. After prayer, lots were cast over Matthias and Joseph Barsabbas. God made the lot fall upon Matthias.—Proverbs 16:33.

Jesus appeared to many people over the course of 40 days after the resurrection. There were eleven apostles that saw Jesus as well; excluding Judas.

Don't get carried away with the word "disciple". A disciple is a learner or follower. Jesus had several hundred disciples who saw him after the resurrection.
"The Twelve" refers to the inner circle of disciples.

Because Judas was gone. Some say hung himself, but that is disputed. Either way he wasn't around because he betrayed Jesus to the Romans.
