We are not vegetarian, but do not eat any beef or pork. The only fruits/vegetables he'll even consider are: raw carrots (with dressing), granny smith apples, romaine lettuce, & iceberg lettuce. He loves pasta!

I've heard that kids are not born picky eaters, so I'm trying to make some changes & could use some help! Thanks!

Try preparing the same fruits and vegetables in a different way,
i.e. sliced apples, sprinkled with a special sauce that is just food coloring
Its an easy way to get them to try again those fruits and veggies and give them a fair chance

It doesn't reallly seem as though your son is in jeopardy - he eats salad vegetables at 4 years of age, and that in itself is an accomplishment. At this age try the Pediasure advertised on TV, give him one tasty multivitamin per day, and don't worry unless he experiences dramatic weight loss. The more you push him on this, the more he'll push back. Make sure he gets adequate protein even if it's peanut butter or just mixed nuts.

I found that the best way to get my sons to eat was to let them help in the cooking. Start small, he can wash veggies with a chair or stool at the sink. The more my boys were involved in the prep, the more they liked it. Eventually they learned to cook more and more, and the more diverse their likes.
I know this is not a menu suggestion, but it really helped me when my boys were young.

There is a great, healthy book named, FIRST MEALS by Annabel Karmel. It has all ages and good pictures of creative things to try...my daughter is SO much pickier then yours...she won't eat pasta, lettuce or carrots...your lucky!

Cookbooks with kids, a Disney cookbook will be a good one. My brother got one for me couple years ago. The cookbook is quite useful.

Cookbooks for family, a slow cooker will be good for both vegetarian and non-vegetarian with busy life-styles. I suggest to use Better Homes & Garden.

Well, if your family do not eat any beef and pork. What about chicken? Ground chicken can make pot-stickers, wontons, even steam foods. For steam, mix ground meat with soy sauce, salt, oil, one egg, and cornstarch. You can also add cabbages (but the vegetable have to drain well.

BUSY NIGHT CHICKEN
From: Quick & Easy Cooking

Serves 4

Ingredients:
4 chicken breasts
1 to 2 teaspoon garlic salt*

Preparation:
If chicken breasts are frozen, defrost in microwave for 10 minutes.
Put chicken breasts (skin side up) in a baking dish. Sprinkle both
sides with garlic salt. Bake at 400 degrees for 30 minutes or until
skin is crisp and chicken is not longer pink.

*This recipe is from a cookbook that I have. I just substitute it with Lawry's Seasoned Salt, minced ginger and onion, or other flavor of my choice. Everything else is just the same.
You can also subsitute chicken breasts with chicken legs or wings. Just cook them for 20 minutes or until done.

yes. Go to bettycrocker.com because there is a spot where you can click on what's in your cupboards. I'm sure you know what your picky eater eats and have it in your cupboards or pretend you do and click them and lo and behold recipes appear. I got a wonderful one from having peaches in my cupboard that you cook with chicken and broccoli, my kids loved it.
