Most people don't floss, but know they should. I hear it all day long. Of course after they have a very uncomfortable, bloody appointment with their hygienist, they sometimes turn around.
Most people should be okay with flossing once a day, but some people get 'stuff' caught in their teeth and need to floss after every meal. What flossing does is disrupt the bacteria under the gums, so depending on your bacteria and how fast it collects and how 'mean' it is, you may need to floss more often!
I will never tell anyone that they floss too much, as long as they are flossing correctly and aren't cutting their tissue.
I like to say
Floss the only the ones you want to keep!

Should be at least 1x daily. But like the previous poster, unfortunately most people don't.
