The gelatin in Jell-O is what lets you transform it into all sorts of different shapes. What exactly is gelatin? Gelatin is just a processed version of a structural protein called collagen that is found in many animals, including humans. Collagen actually makes up almost a third of all the protein in the human body. It is a big, fibrous molecule that makes skin, bones, and tendons both strong and somewhat elastic. As you get older, your body makes less collagen, and individual collagen fibers become crosslinked with each other. The information out there does not say whether one or the other is used. However, if you are allergic to pork, check the boxes on the shelf for the k in a circle or the u. If either appear on the box, then the product is Kosher, and that would mean no pork could have been used. Also, more recently, there are vegetarian gelatin and some made from fish. The k or u on the box will still assure you that it is not made from pork.

Gelatin is a protein product produced by partial hydrolysis of collagen extracted from skin, bones, cartilage, ligaments, etc.
On a commercial scale, gelatin is made from by-products of the meat and leather industry, mainly pork skins, pork and cattle bones, or split cattle hides. Contrary to popular belief, horns and hooves are not commonly used.

Gelatin can come from pork, chicken, beef, veal, lamb, bones, and any kind of meat. When you make a soup (clear ones) and put in the refrigerator overnight. You will see the soup turns into gelatin. I make differerent soups every week and each comes out differently. Try to a a soup with spare rib. I just learn this soup and taste petty good.

i'm afraid your uncle is very wrong. i practice a religion that has rules against eating pig or pig-based products, and i have to be very careful in eating things like jello (which is most often pig gelatin), marshmallows (unless you get them from a middle-eastern store), and various types of candies. if you want to know whether the gelatin is pig based or beef based, look at the ingredient list. if it says just "gelatin" then it is pig based. If it says "gelatin K" or "gelatin u", then it is not. and anything that says kosher or halal on the label, then it is definitely not pig, so you can't go wrong.
