Ham Quiche
6 slices bacon - chopped cooked and drained
3/4 cup chopped, cooked ham
1 cup shredded Swiss cheese
2 tablespoon finely chopped onion
1/2 cup mushrooms, sliced
1/4 cup green pepper chopped
3 eggs beaten
1 cup milk or light cream
1/2 teaspoon salt
freshly ground pepper

Sprinkle bacon in bottom of 9 inch pastry-lined pie plate. Add ham, cheese, mushrooms, green pepper and onion. Combine eggs, milk and seasonings. Pour over first mixture. Bake at 375 F about 25 minutes or until set. Let stand 5 minutes before serving.

Home-made Baked Beans

1 large bag of Great Northern Beans (soaked in cold water over-night)

3 - 5 lbs. of Smoked Ham Hocks (I use what is left over from a large Baked Ham and dice or make chunks to use in place of Ham Hocks. I put the bone in too as it provides additional flavor to the beans.)

1/2 - 1 pound of raw Bacon cut into small pieces

1 large can of Crushed Tomatoes

I large Onion (diced)

1 Sprig of Celery diced fine

3 cups Brown Sugar

1 tbls Salt

1 tbls Pepper

Place all ingrediants in a large Roasting Pan and add cold water until beans are fully covered, put lid on pan and put in oven at 375 degrees. Cook until beans are done checking about every half hour to insure there is enough water in pan while beans are cooking.

Well, you can make scrambled eggs and then add some chopped up ham to it. And add bacon on the side.
I really don't like meat a ton. Especially ham and bacon. But, oh well. I guess I am just weird.

Hashbrown Casserole! Use milk, some sour cream, cheese and mix the ham into the casserole in small cubes and sprinkle the top with more cheese and broken up bacon. Don't forget shredded hashbrowns.

Try ham and in your favorite mac and chesse recipe with diced onion and topped with bacon crumbs.

I also make a pizza with ham, pineapple, green peppers, and topped with cheese and bacon crumbs. Hawaiian Pizza.

In an omelet with ham, diced tomato, thinly sliced green pepper and onion then topped with cheese and bacon crumbs. Denver Omelet.

Ham sandwich with mayonnaise, mustard, lettuce, tomato slice, swiss cheese and three bacon slices.

And finally in a stuffed chicken breast with shredded mozarella, ham and bacon covered in a creamy white wine sauce with parsley.

** Olive Garden Spaghetti Carbonara **

1/4 C. flour
1/4 C. butter
1 qt. milk
1/8 tsp. pepper
1/2 tsp. salt
24 slices extra thick bacon, fried until crisp, then cut into ¼” slices
1/2 cup julienned good quality ham
1/4 C. olive oil
3 C. mushrooms, sliced
6 Tbsp. scallions, finely minced
1 lb. spaghetti, uncooked
2 tsp. fresh parsley, finely chopped
1/2 C. Parmesan cheese, freshly grated

Melt butter in 4-quart heavy saucepan over medium heat. Stir in flour and cook for 1 minute. Add milk, salt and pepper and stir vigorously with wire whip until mixture barely comes to a boil. Reduce heat and simmer 5 minutes, whipping frequently while sauce thickens. Keep warm.

Add bacon and ham into sauce. Heat olive oil in large skillet over medium heat. Add sliced mushrooms and minced onions and sauté until golden. Add to sauce. Cook spaghetti according to package directions. Drain well and add to the sauce along with the parsley. Blend well and transfer to serving dish. Sprinkle with Parmesan cheese and serve immediately.
