I worked in a steak house for 2 years, and I always checked my steaks. The way I check my steak is by putting a meat thermometer in the meat and checking the temperature.

Basically, the inside of a steak is pretty germ free, (since it never touches anything else, like the outside does) so can be eaten as rare as you like it, as long as the outside is cooked or seared to kill any germs. Chicken, on the other hand, is likely to contain salmonella on the inside if not cooked thouroughly. I'm not sure why this is.

Because chicken may have this weird bacteria thing in it that steak doesn't have. The only reason that you NEED to cook steak is so that any ecoli bacteria that may have contaminated it is killed. So you only need to worry about the outside of it contaminated. With ground beef, you have to cook it carefully, because the ecoli could be anywhere in it.

It has to do with two factors, that I can think of:
First, chicken meat does not taste better when less than fully-cooked. It is not juicier or have a nice texture at medium rare. (It actually tastes rubbery and pretty gross.) A good steak has a very nice texture and flavor at medium rare but tastes pretty awful at well done. (Tastes like leather.)
Second, like a lot of people have said, it has to do with salmonella poisoning.

Salmonella. However, steak is a less dangerous part of the beef because it hasn't been handled and ground. I have heard that it is okay to have a rare steak and not okay to have a rare hamburger.

You don't get salmonella poison from eating steak. My neighbor ate undercooked chicken while in college and almost died. Chicken sushi is not for everyone.

With chicken you can get saminila, with whole beef steaks you don't get that bacteria so you can serve them rare. I go for medium well in a steak.

chicken can have salmonella all throughout the meat, steak,however is sterile on the inside, so as long as you make sure to kill any bacteria that may be on the outside you are pretty safe.

Personally I cook everything until it is 'well done' but eating undercooked chicken could lead to salmonella poisoning.

Chicken has salmonella which can give you food poisoning. When chicken is cooked properly, salmonella is destroyed. Beef doesn't have salmonella.
