MEXICAN CHICKEN SALAD
2 boneless chicken breast, cooked, diced and chilled.
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/2 cabbage, sliced and diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the chicken and avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well. Chill for 1 hour and serve cold

San Antonio Chicken Salad
Makes 4 servings
Ingredients:
2 large whole chicken breasts, split, boned and skinned
1/2 cup salsa
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup sour cream
2 tablespoons mayonnaise
1 ripe avocado
1 cup sliced celery
Bibb or leaf lettuce leaves
4 crisply cooked bacon slices, crumbled
Preparation:
Cut chicken into 1/2 inch cubes. Combine salsa, cumin and salt in 10-inch skillet. Cook chicken in salsa mixture, stirring frequently, until cooked through, about 4 minutes. Transfer contents of skillet to mixing bowl; cover and chill thoroughly.
To serve, combine chicken mixture, sour cream and mayonnaise. Mix well. Peel, seed and coarsely chop avocado. Add avocado and celery to chicken mixture. Mix lightly. Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional salsa on the side.

My recipe sounds simple(and it is) but I love it and my family and friends RAVE about it all the time.
I boil 2-4 lbs Chicken thighs(cover with water/slow boil until meat pulls away from the bone)
Drain and cool. Remove skin and bones.
In a large bowl add the warm chicken, salt & pepper(1 tsp each), 2 Tb Onion powder, and enough mayo so it's very moist,almost soupy.(The chicken soaks it up as it cools)
The spread a thick layer inbetween to slices of fresh white bread and enjoy...DELICIOUS..(now I'm hungry!) :)

Here's a simple one, but delicious:
4 boneless chicken breasts, cooked, cut in cubes
2 stalks celery, chopped
1 small red onion, chopped
2 tbsps. oil
1 tbsp. red wine vinegar
1 tsp. sugar
1 cup red grapes (seedless)
salt and pepper to taste
Combine all ingredients. Chill and serve!
Enjoy!

Canned chicken, if not good roasted, or skillet browned chicken breast. shred your chicken and add mayonaise (Helmans) by the table spoon till right consistency, a dash of salt, pepper, garlic powder, and a pinch of tyme and rubbed sage. mix to chunky or creamy texture. Try some minced celery and onion if you have time. let this stand in the fridge till cold, one or two hours if you have the time.

broil chicken until done (seasoned to taste)
once cooled: cut into small pieces (1/4 of a bite)
mix with mayonnaise to taste
mix 1 can on diced pineapple
1 cup diced pecans
eat on a fresh croissant...enjoy!

Most supermarkets offer whole rotisserie (sp?) chickens.
Shred chicken
add mayo, chopped celery, chopped apple, raisins (or grapes), chopped walnut, and a dash of curry powder

I USE TEH PRE COOKED ROTISSERARY CHICKENS FROM TEH GROCERY STORE I SHRED IT UP AND ADD CHOPPED CELERY AND RED ONION SOME SALT N PEPPER AND MAYO....AFTER MIXING I THROW IN WHATEVER CAN OF SWEET NUT I HAVE ON HAND LIKE CRUSHED BUTTER TOFFEE PEANUTS OR SLIVERED ALMONDS ITS GREAT.....
