Enchilada casserole

INGREDIENTS:
1 (1.5 ounce) package dry enchilada sauce mix
1 (6 ounce) can tomato paste
3/4 cup water
1 1/2 pounds ground beef
1 teaspoon garlic salt
1/2 teaspoon onion powder
1 (16 ounce) can refried beans
1 (12 ounce) package corn tortillas
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, mix the dry enchilada sauce according to package directions, replacing tomato sauce with the tomato paste and water
In a large skillet, brown the ground beef with garlic salt and onion powder; drain fat. Mix refried beans and 1/2 cup of the prepared enchilada sauce with the meat.
Dip enough corn tortillas to cover the bottom of a 3 quart casserole dish in the remaining enchilada sauce. Arrange tortillas in the dish. Spoon in half of the meat mixture, covering the tortillas. Spread half of the Cheddar and Monterey Jack cheeses over the meat. Cover with another layer tortillas dipped in enchilada sauce. Spoon in remaining meat mixture and top with a final layer of tortillas dipped in enchilada sauce. Pour any remaining sauce over the layers and top with remaining cheese.
Cover and bake in preheated oven for 20 minutes. Remove from oven and let sit for 5 minutes before serving.

Sausage-Potato Casserole

INGREDIENTS:
3 large baking potatoes, peeled and thinly sliced
ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
1/2 teaspoon dried dill weed
1/4 teaspoon caraway seed
2/3 cup milk

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.
Bake at 375 degrees F (190 degrees) for 1 hour.


Pork Chop Casserole

INGREDIENTS:
2 (1 ounce) packages dry onion soup mix
3 cups water
2 cups instant rice
1 (4.5 ounce) can mushrooms, drained
salt and pepper to taste
6 (3/4 inch) thick pork chops

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a medium size bowl, mix dry onion soup mix and water until dissolved. Pour mixture into a 10x15 baking dish. Add rice and mushrooms and mix to distribute well. Salt and pepper to taste. Add pork chops in a single layer on mixture. Push pork chops down into mixture and make sure they are covered with it.
Cover baking dish tightly with aluminum foil and bake in the preheated oven for 1 hour.

Chicken Rice Casserole

2 fresh, boneless chicken breasts, diced
1 c long grain rice, or use Uncle Ben's
1/4 c frozen veggies like peas and carrots or broccoli
1 can Campbells cream of chicken soup
3 tsp sour cream
1/4 c shredded cheese (ie: cheddar, american)
1 small bag of plain potato chips

Add 1 cup rice to 1 cup water in a pot.
Heat until bubbled and turn to low. Cook for 10 minutes, and then turn off heat. You can skip if using Uncle Ben's instant.

Meanwhile, while rice is cooking...
In a large bowl, add frozen veggies, cream mushroom soup, sour cream, shredded cheese and 1/2 cup water. Mix well.

In a baking dish, add the rice then the chicken pieces.
Then add the veggie mix to the baking dish. Cover mix with 1 small bag of crushed potato chips-- about 1 1/2 cups. Add more cheese if desired.

Cover with foil and bake for 45-50 minutes at 350 degrees.

Test rice before serving. Rice should be soft not hard. If not ready, add 1/4 cup water, mix and bake for 15 more minutes.

Here is a casserole that my mom used to make on busy nights when I was little. I liked it so much as a kid that I asked her for the recipe when I started my own family. And it's so easy to make. Brown 1lb. of ground beef, drain fat, add one can of drained sweet corn, one can of cream of mushroom soup, and one can of cream of chicken soup, mix all together and remove from heat. While you are browning the ground beef you can start boiling one bag of egg noodles. After noodles are done you lightly grease a 2 qt. casserole dish and put in enough noodles to cover the bottom of the dish, then top the noodles with half of your hamburger mixture, then top the hamburger mixture with slices of american cheese, start the layer all over again starting with the noodles and sprinkle the top of your dish with some parmesaen cheese, bake at 350 degrees for about 30 mins. It's really good. You can make it ahead of time and put it in the refridgerator or freeze it and make it later on in the week. Hope you like!

chicken casserole

boil a pound or so of chicken and then shred it into a bowl.
add a can of mushroom soup
a large glob of sour cream
a can of mushrooms
mix together and press into bottom of casserole dish

melt half a stick of butter.
crumble a stick of townhouse crackers into fine pieces (in a ziploc)
then mix with butter till all are wet. spread over top of above mixture...bake till hot all the way through.

can add a vege for color...try frozen peas or carrot shreds.
if you want a more filling dish you can add noodles to it too, but beware that noodles soak up a lot of moisture, so use two cans of mushroom soup and extra sourcream.

this is a recipe to play with, but it was always one of my favorites as a kid

What do you need a recipe for ---open cabinets and freezer and start pulling stuff out. we've used boxed potato au gratin, mac and cheese, rice a roni, left over spaggetti noodles. Left over chicken , or browned ground meat. Cream of something soups are good to use but then so is chucky soups with steak and mushrooms or veggie beef. Canned or frozen veggies . Use what you have and see what happens----so far we haven't gone wrong and have had some really good dinners and leftovers the next day-----fried onions and potato chips make good topping so its crunchy on top

corn casserole...1 stick of butter melted in a casserole dish at 350 deg oven...mix in 1 can whole corn,1 can creamed corn, 1 box corn bread mix,1 egg 1 small carton of sour cream (use the one the size of a yogurt cup) 1 small can chopped jalapeno peppers. after mixing together bake a t 350deg 1 hour

Farfalle and Tuna Casserole

2 6-ounce cans tuna, packed in oil
1/2 cup dry breadcrumbs
1/2 cup grated Parmesan cheese
1 pound farfalle (bow-tie pasta)
3 10-ounce containers purchased refrigerated Alfredo sauce
2 cups thinly sliced green onions
1 cup frozen peas, thawed
2 teaspoons dried oregano
2 teaspoons grated lemon peel
2 tablespoons fresh lemon juice

Preheat oven to 400°F. Drain tuna; reserve oil. Mix breadcrumbs and Parmesan in small bowl. Mix in 4 tablespoons reserved oil from tuna.
Cook pasta in pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Transfer pasta to large bowl. Mix in remaining ingredients. Transfer pasta mixture to 3-quart oval baking dish. Sprinkle with crumb mixture. Bake until pasta is hot and topping is golden brown, about 25 minutes.

Tex Mex Chicken and Rice Casserole

1/2 cup chopped onion (1 medium)
1 tablespoon olive oil
1 6.9-ounce package chicken-flavored rice and vermicelli mix
1 14-ounce can chicken broth
2 cups water
2 cups chopped cooked chicken
1 cup chopped seeded tomatoes (2 medium)
3 tablespoons canned diced green chile peppers, drained
1 teaspoon dried basil, crushed
1-1/2 teaspoons chili powder
1/8 teaspoon ground cumin
1/8 teaspoon black pepper
1/2 cup shredded cheddar cheese (2 ounces)

Directions
1. In a medium saucepan cook onion in hot oil over medium heat until tender. Stir in rice and vermicelli mix (including seasoning package); cook and stir for 2 minutes. Stir in broth and water. Bring to boiling; reduce heat. Cover and simmer for 20 minutes (liquid will not be fully absorbed).
2. Transfer the rice mixture to a large bowl. Stir in chicken, tomatoes, chile peppers, basil, chili powder, cumin, and black pepper. Transfer to a 2-quart casserole.
3. Bake, covered, in a 425 degree F oven for 25 minutes. Sprinkle with cheese. Let stand for 5 minutes before serving. Makes 6 servings.


Pizza Casserole

Ingredients
1 tablespoon olive oil
1 medium-size onion, chopped
2 sweet yellow, red or green pepers, cut in large dice
2 medium-size zucchini, cut into rounds
2 cloves garlic, chopped
3 cans (14.5 ounces each) no-salt-added recipe-ready diced tomatoes, drained
5 fully cooked chicken sausages (about 12 ounces), sliced
1 teaspoon dried Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 tube (11 ounces) refrigerated bread sticks

Directions
1. Heat oven to 350 degrees F. Grease 13 x 9 x 2-inch baking dish. Heat oil in large skillet over medium-high heat. Add onion and peppers; cook 5 minutes. Add zucchini and garlic; cook 5 minutes, until barely tender.
2. Add tomatoes, sausage, Italian seasoning, salt and pepper; cook until somewhat dry, 5 to 7 minutes. Add 2 tablespoons Parmesan. Spoon half into prepared dish. Top with 1 cup mozzarella. Add remaining tomato mixture. Arrange bread sticks on top in lattice pattern, trimming to fit. Sprinkle with remaining Parmesan and mozzarella.
3. Bake in 350 degree F oven 25 minutes, until bread sticks are browned and filling is bubbly. Makes 8 servings.
