Pork is generally considered to be a red meat. Game birds, fowl and fish are considered white meats (though there are red or dark varieties of all of them).

It is purely a convention.

If your real question was, what is unclean about pork, it is because pigs eat almost anything and appear to be dirty animals (they are not really, but that is beside the point). They can also harbour many diseases and parasites which can be transmitted to humans, whereas cattle and sheep and goats are not so likely to. This is why pork is considered unclean by Jews and Muslims, amongst other religions.

Why is Pork a "Red" Meat?
Oxygen is delivered to muscles by the red cells in the blood. One of the proteins in meat, myoglobin, holds the oxygen in the muscle. The amount of myoglobin in animal muscles determines the color of meat. Pork is classified a "red" meat because it contains more myoglobin than chicken or fish. When fresh pork is cooked, it becomes lighter in color, but it is still a red meat. Pork is classed as "livestock" along with veal, lamb and beef. All livestock are considered "red meat."

Is a pigs as* pork??

Ham's sometimes turn red when they are cured. Most pork is an off-white color. But it's full of microscopic worms that are hard to kill and can get into your meaty tissue.

Actually a pigs butt is a ham, cured or not.

Eat sulfur cured pork, sulfur does the best job at killing those parasites, Also make sure it is very well cooked.
