The shiny sidw should be on the outside and the matte side on the inside.
Even when putting foils in someones hair, the shiny side stays on the outside.
Remember the shiny side is always on the outside, you can also see your reflection lol ;-)
PS: think the matte side acts as an insulator, which helps cook the food so again shiny side out and this is what i've seen my mum and Jamie Oliver do in the kitchen.
As i said foil acts as an insulator so it probably doesn't matter which way you you put your tinfoil on, your food is still going to cook, but shiny side out is what most people do.

Aluminum foil is made by rolling sheets of 98.5 percent pure aluminum metal between pairs of polished, lubricated steel rollers. Successive passes through the rollers squeeze the foil thinner.
Household aluminum foil is so thin (0.0005 of an inch) that the rollers can't handle it without tearing it. The final rolling is therefore done on a sandwich of two sheets, face to face. The outer surfaces emerge with a finish as smooth as the rollers, while the two face-to-face inner surfaces emerge with a matte finish. Hence, a shiny side and a duller side. When you use the foil, it makes no difference which side is up, down or sideways.

matte should face out because surely the shiny side would reflect heat some away, not good for cooking things!?

It relies upon what you're cooking. The bright edge displays warmth extra beneficial than the matte edge. If the food you're cooking is comparatively comfortable to burning, the bright edge out makes the warmth gentler. on the different hand, if the bright edge is inward it displays extra warmth back interior, inflicting the food to prepare dinner swifter. as an occasion, roasting garlic in foil is amazingly comfortable, so the bright edge is going out. yet baking potatoes could make the main of bright-edge-in scientific care.
