It depends what you're cooking.

The shiny side reflects heat more than the matte side. If the food you're cooking is relatively sensitive to burning, the shiny side out makes the heat gentler. On the other hand, if the shiny side is inward it reflects more heat back inside, causing the food to cook faster.

For example, roasting garlic in foil is kind of touchy, so the shiny side goes out. But baking potatoes can benefit from shiny-side-in treatment.

The shiny side reflects more heat, whereas the matt side absorbs heat. Technically speaking the matt side should help to cook food quicker but the difference in cooking time wouldn't be very long.

Shiny side should face out if you are using it on a grill. If you are using it in an oven (i.e. Baked potatoes) I think it's the same way.

matte should be on the inside as it reflects the flavour better than if the foil was on the inside :D i looooove cooking!!
