Red, White, and Blue Parfaits
Makes 12
FOR THE CURRANT GELATIN:
4 1/2 pounds fresh red currants, stemmed
3 cups sugar
3 envelopes unflavored gelatin (about 6 3/4 teaspoons)
FOR THE PANNA COTTA:
2 envelopes unflavored gelatin (about 4 1/2 teaspoons)
3 1/2 cups whole milk
1 cup heavy cream
3/4 cup sugar
FOR SERVING:
1 1/2 pounds fresh blueberries
2 ounces fresh currants on the stem
1. Make the currant gelatin: Put currants and sugar in a large saucepan. Bring to a boil. Reduce to a simmer, and cook, stirring occasionally, until currants are very soft, about 10 minutes.
2. Put 1/3 cup cold water into a small bowl; sprinkle with gelatin. Let soften 5 minutes. Add to currant mixture; stir until gelatin has dissolved, about 5 minutes.
3. Pour through a fine sieve into a bowl set in an ice-water bath, gently pressing out liquid with a spoon; discard solids. Remove from water bath, and let stand, stirring occasionally, until cool but not set. Pour 3 to 4 tablespoons currant gelatin into each of twelve 8- to 10-ounce glasses; set remaining currant gelatin aside. Refrigerate glasses until gelatin is completely set, about 1 hour.
4. Meanwhile, make the panna cotta: Put 1/3 cup cold water into a small bowl; sprinkle with gelatin. Let soften 5 minutes.
5. Put milk, cream, and sugar into a medium saucepan; bring almost to a boil. Reduce to a simmer. Add gelatin mixture, and stir until gelatin has dissolved, about 5 minutes. Pour through a fine sieve into a bowl set in an ice-water bath. Remove from water bath; let stand, stirring occasionally, until cool but not set.
6. Spoon 3 to 4 tablespoons panna cotta over currant gelatin in each glass; set remaining panna cotta aside. Refrigerate glasses until panna cotta is set, about 1 hour. Repeat with another layer of currant gelatin and panna cotta. If either mixture becomes too firm, set over a pot of simmering water until softened.
7. To serve, top each parfait with blueberries and currants, dividing evenly.

I made a great Tiramisu for a cookout last weekend using a Kraft/Philly Cheesecake recipe and Stella d'Oro breakfast cookies. It took less than 5 mins to put together and was a huge hit
Need:
3 packages cream cheese or Neufchatel cheese
3/4 cup sugar
1/2 c milk
1 container Cool Whip
2 T almond or brandy extract
3/4 c boiling water *
3 T instant coffee *
* or you can skip this and use some very strong leftover coffee
1/2 c sugar
2 packages Stella d'Oro breakfast cookies
1/2 pint fresh fruit (strawberries or raspberries are great)
Hershey's syrup or cocoa powder
13"x9" baking pan or cake pan or a trifle bowl
Mix together the boiling water and coffee with 1/2 c sugar. Using the first package of cookies, dip them in the coffee, then lay them on the bottom of the pan.
Mix together the cream cheese with the remaining sugar and the milk and extract til smooth and fluffy, then mix in the Cool Whip. Beat til smooth.
Spoon half of this over the cookies. Then put on a nice layer of your fruit, but don't totally cover the cream cheese mixture. It helps it stick together better if the cream cheese hits the next layer. Sprinkle on a little cocoa powder or lightly drizzle the chocolate syrup.
Repeat with more cookies in cofffee, then the remaining cream cheese. Decorate with a dusting of cocoa powder or drizzling on more chocolate syrup, then some whole pieces of fruit.
Cover and let chill an hour or more.

If you don't feel like barbecuing or lifting a finger, here's an easy menu so you can enjoy the day!
POT ROAST, COLE SLAW AND JELLO:
Pot roast:
3 lb chuck roast
1 pkg lipton onion soup mix, dry
1 can cream mushroom soup, campbells
1 celery stalk, diced
1 onion, diced
2 whole carrots, peeled and cut
4 potatoes, peeled and cut in 1/4
1 crushed garlic clove
3 tbsp flour
1 Reynold's slow cooker liner, optional
The slow cooker liner makes cleaning up a snap!
In the crock pot, add the can of cream mushroom soup, a can of water, the lipton dry soup, flour and mix the ingredients well.
Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies. Add water to barely cover the veggies (remember the water level may go up during cooking!).
Cover and turn crock pot to med/low. Cook 6-8 hours and it will be so tender! Serves 4
MEXICAN COLE SLAW
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/2 cabbage, sliced and diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well. Chill for 1 hour and serve cold
JELLO DESSERT
1 pkg large jello, any flavor
coolwhip
fresh fruit
Make the jello as on the package but use 1/2 cup less water.
Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.
Put the mix in a glass, and top with more fresh fruit or coolwhip.
Serves 4

Here's a cool snack mix I found today: Looks Yummy!
Taco Seasoned Chex Mix:
3 cups Corn Chex
3 cups Rice Chex
2 cups bite-size cheese crackers
2 cups small pretzel twists
1 cup salted peanuts
3 tbsps. of vegatable oil
2 tbsps. of water
1 pkg. Old El Paso Taco seasoning mix
1. In a large microwavable bowl, mix cereals, crackers, pretzels, and peanuts.
2. In a small bowl mix, oil, water, and taco seasoning. Pour over cereal mixture, stirring untill evenly coated.
3. Microwave uncovered on High about 5 minutes, stirring every 2 min, until mixture begins to brown. Spread on wax papre or foil to cool.
20 servings, 1 serving (1/2 cup) calories 150

You could make a fresh strawberry pie :)
Crust:
50 reduced-calorie vanilla wafers
1/4 cup butter or stick margarine, melted
2 tablespoons sugar
1 teaspoon grated orange rind
Cooking spray
Filling:
2 cups ripe strawberries
1/2 cup water
2/3 cup sugar
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
6 cups small ripe strawberries
1/2 cup frozen reduced-calorie whipped topping, thawed and divided
Preheat oven to 350°.
To prepare crust, place wafers in a food processor, and process until finely ground. Add butter, 2 tablespoons sugar, and orange rind, and pulse 10 times or just until wafers are moist. Press into bottom and up sides of a 9-inch pie plate coated with cooking spray. Bake at 350° for 15 minutes; cool on a wire rack.
To prepare filling, mash 2 cups strawberries with a potato masher. Combine mashed strawberries and water in a small saucepan; bring to a boil, and cook 5 minutes, stirring occasionally. Press the strawberry mixture through a sieve into a bowl, and reserve 1 cup strawberry liquid (add enough water to measure 1 cup, if necessary). Discard pulp.
Combine 2/3 cup sugar and cornstarch in a pan; add strawberry liquid, stirring well with a whisk. Bring to a boil; cook 1 minute, stirring constantly. Reduce heat, and cook 2 minutes. Remove from heat; stir in lemon juice.
Arrange a layer of small strawberries, stem sides down, in the crust. Spoon about one-third of sauce over the strawberries. Arrange the remaining strawberries on top, and spoon the remaining sauce over the strawberries. Chill for at least 3 hours. Serve with whipped topping.
Yield: 8 servings (serving size: 1 wedge and 1 tablespoon whipped topping)

Deviled eggs are great too!
Hard boil a dozen eggs, peel them, and cut them in half.
Remove the yolks and place into a bowl.
Mix with mayo, mustard, and a little bit of pickle juice.
top with paprika for decoration...

Buy pre-made graham cracker pie cust, instant chocolate pudding, cool whip and fresh berries. Layer the pudding and then the cool whip and top with sliced strawberries and blueberries
